Jacob is all sunshine at the beginning & Bella is depressed & reckless the whole book.

Raybearer by Jordan Ifueko (if you squint really hard)
for sure The Emma Project by Sonali Dev (comes out this May. Just finished the ARC and loved it. The other books in the series also lean towards serious/grump girls x sunshine/positive guys)

The Ippos King by Grace Draven.
