You don't have to keep the head on the damn fish LMAO, we used to serve these in a restaurant I waitressed at and we took the head off and managed to debone the thing, and man Branzino is delicious.

lol, yup it's a fish but it is common for it to be with a head and bone in, not always though, and when it's not it's really yummy, very buttery white fish similar to Chilean sea bass.
