By wiping out thousands of little “mom and pop” stores they have without doubt contributed to uniformity in the architectural environment Yet the array of goods they offer the consumer is incomparably more diverse than any corner store could afford to stock. Thus at the very moment that they encourage architectural sameness, they foster gastronomic diversity.
