The problem here has to do with the economics and logistics of properly applying the scientific method. Most of what we know (or think we know) about foods and health comes from observational studies or samples of convenience, not proper experiments. In observational studies, as the name implies, we simply watch people who have different diets over a period of years and see how they fare.
