Also, it’s important to note that since the 1970s, greenhouse gas emissions from cattle in the United States have dramatically decreased. This reduction is due to several factors involving increased efficiencies and a lower total number of animals.

Cattle farming isn’t the only cause of deforestation of the world’s forests. Brazil produces about 120 million tons of soybeans and exports about 80 million tons of that to China, where much of it is turned into soybean oil for humans, and the waste products (in the form of soy meal) become feed for pigs. Another issue, not surprisingly, is wood production. And palm oil production is the leading cause of deforestation in Asia.

The U.S. healthcare system produces 10 percent of our greenhouse gas emissions. As I mention earlier in this chapter, U.S. cattle production is responsible for only about 2 percent of emissions, so there’s another way in which the carnivore diet provides environmental savings. Alleviating certain health conditions places less burden on our healthcare system.

We could flip the question around and ask how people would fare if they had to open coconuts with their teeth or eat unprocessed beans or nuts. Perhaps vegan proponents could explain how they would survive year-round eating only local fruits in places like Canada without having any tools or other ways to preserve food.
