As the water vapor rises into the higher levels of the atmosphere, it approaches cooler air. The differential between the warmer air and the cooler air causes the vapor to condense back into water droplets, forming clouds. The energy that was needed to evaporate the water gets released in the process. The air is now even hotter, causing it to rise even more.
