In Denmark, by contrast, where the land is flat and the summers are longer, and arable and pasture made up a majority of the land at the turn of the century – 75 per cent, as opposed to a mere 12 per cent in Sweden and 3 per cent in Norway – relatively few people decided to seek a better life overseas. Here the economy developed on the basis of the mechanization of food processing and a switch from grain to meat and dairy products. Danish butter and Danish bacon became major exports in this period.
