Edible Parts: Bull thistle root is rich in inulin and can be eaten raw, although it tastes better with other vegetables. Young flower stems and leaves can be eaten in a salad or sautéed. The leaves can be eaten although they are bland. Always remove all the prickles before eating! The flower buds can be used like small globe artichokes when cooked, and the seeds can be roasted.
