Americans have become helpless wheataholics, with per capita annual consumption of wheat products (white and wheat bread, durum pasta) having increased by twenty-six pounds since 1970.13 If national wheat consumption is averaged across all Americans—babies, children, teenagers, adults, the elderly—the average American consumes 133 pounds of wheat per year.
