What about Fruits and Fruit Juices? Animals use fruits to increase their fat stores by waiting until the fruit is very ripe or by gorging on as many fruit as possible. One reason for waiting until fruit is ripe is that it increases the amount of fructose and decreases the vitamin C levels.130 However, the fruits we typically eat are not mushy ripe fruits but rather are more tart and contain less fructose and have high contents of vitamin C, antioxidants, potassium and fiber. As a consequence, high intake of fruits in humans is associated with a reduced frequency of diabetes.131
