Basic vinaigrette 1 shallot 1/4 teaspoon salt 1 teaspoon Dijon mustard juice of 1/2 lemon 1 tablespoon red wine vinegar 1 clove garlic 1/3 to 1/2 cup olive oil Mince the shallot as finely as you can. Put it in a bowl with the salt, mustard, lemon, and vinegar. Smash the garlic once with your hand or the handle of a knife, then add it to the bowl. You’ll remove it before dressing the lettuce.
