but the tubers had become so essential to all of northern Europe that Prussia and Austria fought a “potato war” in 1778–79 in which the two armies spent most of their time scrambling to get food for themselves and deny it to the enemy. Only when every potato in Bohemia had been consumed did hostilities end.
