Chanterelles are one of the most popular collected mushrooms. In the Pacific Northwest, harvesting chanterelles is a controversial, multimillion-dollar business. Unfortunately, the gourmet mycorrhizal mushroom species are not readily cultured. Chanterelles demonstrate an unusual interdependence on soil yeasts, making tissue culture difficult.
