38356 I enjoyed them in the beginning. In fact, she was my first RS read. The problem I had was the ongoing drama with Jules. Most of the characters wrapped up their HEA in one book, and Sam and Alyssa spanned a few books, but their story was really, really intense. I just didn't get into Jules ongoing drama with either Adam or Robin. I loved Jules as a character, but I wish his HEA had been more in keeping with the others of the series.

38356 I was reading SB back to back and so it became monotonous. Not the author's fault, mine. Although, there's one couple that keeps showing up that I could do with less of, but otherwise, I do enjoy her books.

38356 Steph, I agree 100%. I was a huge Brockmann fan, and she was my number 1 until I read Cindy Gerard. Then Brockmann slipped to #2, and CG was #1. Then I read Pamela Clare's I-Team books and now she holds the #1 spot for my favorite RS authors. Hell, she might even hold the top 3 spots. The books are so, so good!

38356 We make this one quite often, and everyone loves it. I've also posted this recipe in other forums, and the people who have tried seemed to enjoy it also.

French Toast Casserole


5 cups cubed white bread
4 eggs
1 ½ cups milk
¼ cup white sugar
¼ t salt
1 t vanilla extract
1 T softened margarine
1 t ground cinnamon


Preheat oven to 350 degrees and lightly butter an 8x8 inch-baking pan.

Line bottom of pan with bread cubes.

In a large bowl, beat together eggs, milk, 2 tablespoons sugar, salt and vanilla. Pour egg mixture over bread. Dot with margarine; let stand for 10 minutes

Combine remaining 2 tablespoons sugar with 1-teaspoon cinnamon and sprinkle over the top. Bake in preheated oven about 45 to 50 minutes, until top is golden.

Serve with butter and syrup if desired.

38356 I haven't tried this yet, but it sounds so, so good. I'm going to make it for dinner this week. This is a make ahead dish and must be refrigerated overnight.

Ingredients

8 C French bread, cut into 1 inch cubes
3 tart apples, peeled and chopped
8 oz cream cheese softened
3/4 C brown sugar
1/4 C sugar
1/4 C apple juice
2 t. vanilla
1/2 C English Toffee bits
5 eggs
3/4 C milk

Directions:

Place 1/2 of the bread cubes into a greased 9x13 inch baking dish and top with apples. In a large bowl beat the sugars, cream cheese, 1 t. vanilla, and apple juice until smooth. Stir in the toffee bits. Spread mixture over apples and top with remaining bread cubes.

In another large bowl, beat the eggs, milk and 1 t. vanilla until well blended. Pour over bread, cover with foil and refrigerate over night.

Remove from refrigerator 30 minutes before baking. Bake uncovered at 350 for 40-45 minutes or until a knife inserted in the center comes out clean.

If you want to, while the French toast is baking, prepare this Apple Syrup Recipe:

Ingredients

1 C sugar
2 T. cornstarch
1/2 t. cinnamon
1/2 t. nutmeg
2 C apple juice
2 T. lemon juice
5 T. butter

Directions:

In a medium saucepan, whisk together everything except butter and heat to a boil, whisking constantly. Boil for 1 minute, then stir in butter. Remove from heat and serve over the Apple Toffee French Toast.

38356 I feel very unorganized! I only know for sure what we're having those nights because I made a Costco run yesterday... and wow... they had so many vendors out with samples, we didn't have to go out for lunch afterward!

I know that Monday I'll likely grab steak or chicken from the freezer. We have some baking potatoes and sour cream that need to be eaten, but it'll be frozen veggies as the "healthy" side.

38356 I wasn't able to nurse my kids because with the delivery of baby #1 I ended up going into seizures, died and was, of course, resuscitated, only to then spend a solid week in ICU, in a dark room. I tried nursing #2, but she ended up back in the hospital, jaundiced, for almost a week. With baby #3, at nine weeks into the pregnancy I went into fibrillation which lasted over 4 hours and was put on 3 different kinds of heart medications, which I had to continue after the birth. That wasn't conducive to breast feeding.

I wish I had wonderful pregnancy and delivery stories, but I don't. What I do have is 3 incredible kids who have brought me more joy than I can express.
