Personally, I think the ending is really suitable for this series. Yep, pretty much like Lord of the Rings: after the big bad guys are defeated (Sauron and Galbatorix), there's still some minor details the heroes must deal with (Frodo frees his homeland from Saruman and Eragon tries to find a nest for the eggs), before it finally ends with the heroes leave their homeland (Frodo leaves and Eragon leaves). And I think Paolini intentionally relates Eragon to LOTR. The two stories have a similar feeling in it: ancient, legends, magical, heroic. So, yeah, I think the ending fits just well.
Saphira, of course! Her way-of-talking really sounds like a little kid trying to understand a complex word -- like 'The wolf-elf-in-Eragon's-shape' or 'black-shrike-thorn-cave' or 'blood-mad-priests' or 'dragon-blood-elf-Arya'.
Just finished reading it this week! And I LOVE the ending, although the last few chapters feel more like 'dawdling' after Galbatorix's death. But I think it fits it, especially with Eragon eventually left Alagaesia. It's similar to the ending of LOTR: dawdling last chapters and the main character leaves everything behind.But I don't think it's a good idea if Eragon would come back to Alagaesia. It'll feel ... half-arse, if you excuse my expression. Eragon has made a big decision not to come back, so he shouldn't come back no matter what happens. If Paolini wanted to make a sequel series (though I'm absolutely against it, since I never read sequels of books that already have excellent endings), it's better if Eragon doesn't appear in Alagaesia anymore, and even if they need his help, they could send the main character to face him in his place, much like Eragon has done when going to meet Oromis. In any way -- and I know I'm being cruel when saying this -- I don't want Eragon to come back to Alagaesia; it'd ruin the ending.
