Wow that is a major question. Favorite Fantasy is probably The Fellowship, as for Horror really don't have much of an opinion on books just seen movies. As for Science Fiction that is probably like all other categories with so many subgenres that you can't just pick one. For the big authors, I love Card's Ender's Game, I love Herberts Dune (no spoilers on the movie I haven't seen it yet), and cyberpunk is a tie between Snow Crash, Neuromancer, and Do androids dream of electric sheep (I love Blade Runner but that is not the book). For indie authors, I am in love with GS Jennsen's Asterion Noir series and really like EJ Fisch's Ziva Payvan series.
