Nat Hurt I really think this answer hits the nail right on the head but I also feel its important to note that when she is first hostile about "dissecting" what makes these white children so wanted (for lack of a better term) she is focused on the Shirley Temple doll. She also seems to hold some kind of extreme significance on the blue eyes of Shirley Temple. Perhaps since eyes are said to be the windows to the soul maybe that could hold some significance in why it is the Bluest Eye. Just speculation. I like your answer though.

Nat Hurt I decided to re-read the novel and realized the bluest eye actually refers to a personal story from Toni Morrison.
