Same problem here, just with feline hair. I'll be piling mine up on the table.
She doesn't mean category as in tops, pants, etc. She means Clothes, then Books, then Papers, and then the next thing (kitchen, bathroom, etc.,)...because people keep pieces of a category in multiple places. Like clothes in the bedroom closet, and the hall closet, and in the laundry room. Gather everything in that category at once and do it all in one fell swoop. :)
Yes, but if you have a lot of clothes, she does say you can do all the tops, then all the pants, to break it down into manageable pieces.
I had the same problem, but what I did is I took a big garbage bag and I cut it to that it spreads on the floor and then I put all my cloths on it. The cloths didn't get dirty, and it was easy for me to just pick up the edges and move it to some other place if I wanted to.
Use whatever platform suits you best, whether it be floor, bed, table, or desk. Also, further dividing things into sub-categories is encouraged. Her main point is to put everything from a main category into a single spot so you see exactly how much you have & that nothing gets missed in the process. You might pull out only your tops to later find that one was hiding among the skirts, at which point, according to her rules, you will automatically need to discard it without ever having a choice in the matter. So, empty those closets, dressers, boxes, & bags! Her only exceptions to the clothing rule is what you're wearing at the time of cleaning & anything that's in the laundry since these items are obviously in somewhat regular use.

She goes a bit farther in depth in her next book, "Spark Joy", which is more or less the intermediate level of her tidying lessons where she answers many of the FAQs she's gotten since "Life-Changing" was published, so I recommend that you check out that book for more clarification if & when necessary.
