I disagree with your assessment and it makes little difference to me that you have a linguistics degree or TESOL cert. Should've is the contraction of should and have. "Should of" is simply incorrect in any and all instances. In this novel, there's no indication that any characters have a particular dialect that might excuse this, as you're wont to do.
