That looks familiar. I can't say for sure. I could get it through an interlibrary loan, but the library isn't doing them due to Covid
Here's a short Amazon "Look Inside" preview of Adam and Eve and Pinch-Me by Julie Johnston - Rainbowheart's suggestion:https://www.amazon.com/Adam-Eve-Pinch... There are different cover images.

I found your question when looking for the same book! I am almost positive it is The Popularity Secret (thank you Rainbowheart for your list, that's where I found it). The description isn't nailing what I thought stood out most about the book, but from the comments I'm pretty sure this is the one. People don't seem to think it has held up well haha, but I found and bought a used copy so we'll see :-) https://www.goodreads.com/book/show/1...

A teenage girl maybe 15 or 16. She's been in foster care for years.
The family consists of a mom and dad and several adopted kids. I believe one was blind and one was in a wheelchair, beyond that I can't remember
The main character pretends she has a "normal" family so she can be popular
She gets adopted at the end by the family after learning to be less judgmental.
She loses her fake friends when she gets adopted.
When her foster parents tell her they want to adopt her she doesn't understand why since she isn't disabled. I believe the response is that not all disabilities are visible and being in foster care can have lifelong reprucussins.
