I agree that the love didn't feel real. I don't think there was enough time given to the relationship for it to feel geniune. Towards the end when she's writing about them being deeply in love it just didn't register with me.
While I think that quote may be fitting in some situations it definitely doesn't work in all. Bella would have ended up with Jacob if it did.
No. Because she met Jacob When she was a kid. Hence she chose the second one :)
