I agrre with your point of view. I reality she will not be able to grow old with either one. She will like Magnus only spend a centain amount of year with their loved ones.
We may not know for sure what she is, but she is definately immortal. *minor spoilers for City of Glass* she shows up at the end of CofG. They don't say her name, but the author confirmed it was her.
