Some oldies but goldies that I read myself. You can probably find translations for most.

By Spanish authors:

"Pepita Jiménez" and "Juanita La Larga" by Juan Valera.
"El sombrero de tres picos" by Pedro Antonio de Alarcón
"La Casa de La Troya" by Alejandro Pérez Lugín.
"La tesis de Nancy" by Ramón J. Sénder. I hesitate to include this one because the humour is based in word games and puns that would not be easy to understand, plus it must be very dated (I read it 40 years ago).

By Latin American authors:

"Como agua para chocolate" by Laura Esquivel.(less)
