Well there's 4 people to pick from:

Gottfried - Considered the best version but it's almost 400 pages long and it tends to really drag
Beroul - The 'dirty' version, in that it isn't beautiful poetry, and the characters are not properly defined. There's also no finished version and the translator has to finish the story by drawing from various sources.
Bedier - Most popular contemporary version of the legend, but considered to fall pale in comparison to both Gottfried and Beroul.
Oberge- Not very true to the original and not a popular version.

When it comes down to it, it's either Gottfried or Beroul, I personally prefer Beroul because it gets the job done without too much sidetracking, and I used the internet whenever I felt the Beroul version was lacking in story.
Beroul is a quick and easy read, Gottfriend tends to sidetrack a lot such as in the part where he goes off track to talk about the history of Tristan.(less)
