I'm a little confused by this sentence. Why they drink the water then spit it? Is there any traditional custom behind it?

The water was an excuse to go outside and do anything but sit in a classroom.(less)

I've begun it and am amazed by the writing. I have lived in some of the places she writes of and have never seen such beautifully concise descriptions of the Wet Coast. That's an altered term - not a typo. What do others think of the characterization of the people? I love it as well.
