Holidays call for great desserts, and there's nothing I enjoy more than Candy Apple Pie (just a fancy name for Apple Cobbler, or Apple Betty, whichever you prefer). Comes together quick and easy, and it's delicious! Your guests will be asking for the recipe - keep some index cards handy!
OVEN 400 degrees
9 x 13 pan
Candy Apple Pie
6-8 apples, any kind, peeled, cored, sliced (depending on size of apple)
1/2 c. sugar
1 tsp. ground cinnamon
1 cup brown sugar, packed
1/2 c. butter
3/4 c. flour
3/4 c. quick cooking oats
I use a food processor to slice apples. Butter 9 x 13 pan, and place sliced apples in pan. Sprinkle with sugar and cinnamon. In a bowl, blend together brown sugar, butter, flour and oats. pat it down on top of apples; may not cover completely. Bake for 30 minutes. Serve warm, with optional, but highly recommended, vanilla ice cream, or whip cream. Mmmmm!!!

About the AuthorI’ve been writing stories since I was little–I finished my first story (3 spiral notebooks) when I was eleven. I think it’s in a box in the garage, actually. Because, really, everyone should keep the first story they ever wrote. Sure, it featured the boy I had a crush on, unicorns and rainbows and a witch that looked suspiciously like my sixth grade teacher, but whatever. Okay, yeah, it’s super embarrassing. Especially when you consider that I didn’t exactly know the difference between profuse and perverse, and used them interchangeably. Mmhm. Well. Let’s move on.
While graduate school effectively killed the writer in me for a time, the stories kept percolating in my head. After my son was born, I decided to try my hand at writing romance novels. I finished my first, wrote a second, and started entering contests. Eventually, The Marker got picked up by Soul Mate Publishing, and the rest is history.
When I’m not writing–or at work–you can find me hiking in the hills behind my house, camping in my tiny camp trailer with my two dogs, two kids, and lawman husband, or with my nose in a book.

I'm sharing another finger food recipe today - my favorite kind of snack! This is an oldie but a goodie...my Mom used to make this for parties, all year round, and it's simple, easy and delicious.
Veggie and Anything Dip
1 Cup sour cream
1 8 oz jar Hellmans mayo
1 packet of Good Seasons Italian salad dressing mix
3 TBSP lemon juice (preferably fresh squeezed)
Mix all ingredients together, chill. Serve with vegetables, crackers, chips.
I didn't even have to refer to the recipe card for this one - that's how many times I watched my Mom make it, and how many times I've made it....enjoy!

So many of our holiday decorations are steeped in tradition. I have about 25 or so handmade wooden hearts and stars my father and I made about ten years ago, in his wood shop. I painted them in primary colors with my daughter, who was about 3 at the time. Each year, when I get them out, it brings back wonderful memories.
But I'm also all about starting new traditions, and each year, our tree seems to be getting smaller. I still like to have a real one, and this year our little guy is about 4 feet tall. My daughter named him Mistletoe. He was easy to set up, move around, and I just know he's going to be very happy with us for the next two weeks. Welcome!

I'm sharing a recipe for an appetizer today - my favorite! In fact, I love to make a meal out of just snacks sometimes. Smoky Black Bean Dip is popular at my house - you can serve it warm or cold - it rocks!
1 15 oz can black beans, drained and rinsed
1 small clove garlic, minced to a paste (more or less depending on your preference)
Salt and freshly ground pepper, to your liking
1 TBSP fresh lime juice
1 TBSP white wine vinegar
1/4 tsp cumin
2 tsp ground chili powder
2 TBSP cream cheese
Mix all in a food processor. Heat in microwave for 20-30 second intervals, stir, heat to your liking. Serve with salsa, tortilla chips, veggies. Easily doubles or triples!

Rwanda has seen tremendous growth and development in recent years, and reconciliation is a major national initiative. Her debut novel, Hands Full of Ashes, was inspired by this trip. Today, I'm sharing my favorite holiday movie - that's a tough one, because there are so many! A Christmas Carol, with Reginald Owen, is my favorite version of the Dickens' classic. I remember watching it with my Dad. He would quote the movie this time of year; "Marley was dead, dead as a door nail." and "I say, your Governor is a crusty old bird!" Now, I find myself doing the same thing with my daughter. Good memories!
Emmett Otter's Jug Band Christmas is also a favorite. It came out in 1977. I was seven years old when I first saw it. My daughter just turned thirteen, and she wanted to watch it last week, which choked me up. That makes it timeless in my book. :) Who knew Emmett Otter would still be cool all these years later?

As part of our 'tour', today, we're sharing our favorite dessert recipes. Mine? Pumpkin Pudding Pie...an easy, and delicious twist on pumpkin pie! Just in case you didn't get enough at Thanksgiving, and you're looking for a no-fail crowd pleaser, I daresay Triple P (PPP) is your gal. I love this recipe because it fits in a
9 x 13 pan - something that just feels like home. Here goes:
Pumpkin Pudding Pie
OVEN 325 degrees
9 x 13 pan
29 oz.. can unseasoned pumpkin
12 oz can evaporated milk
4 eggs, beaten
3/4 c. sugar
1 tsp salt
1 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
Boxed yellow cake mix
1 cup chopped nuts
2/3 butter, melted
Mix pumpkin, milk, eggs, sugar, salt, ginger, cinnamon and cloves together. Pour into a lightly buttered 9 x 13 pan. Sprinkle cake mix over the top. Sprinkle with chopped nuts. Pour melted butter over all. Bake for about 1 hour and 15 minutes, or until a tester comes out clean. Serve warm or cooled. Serve with whip cream, and get ready for the recipe requests :) Enjoy!

“I’d say.” Jack watched intently as she licked a dab of sauce from her knuckle. Hot damn, she made that look good. He wanted to lean in and take a taste for himself. Instead, he settled for another bite of his own sandwich.
“God, I haven’t had a Mighty Ricky in ages.” She took another enormous bite. “These rock.”
“You were pretty jacked up about them yesterday.”
“What do you mean?” She stopped, mid-bite.
“You told me they were one of your most popular sandwiches. I made a few since then, so I decided to see what all the hype was about.” He chewed thoughtfully. “A meatball and an Italian hoagie hybrid.” He swallowed. “Damn. That’s good.”

In my book, A MIGHTY GOOD MAN, a lot of the action takes place in a diner, Mighty Ricky’s. It’s fictional, but the Mighty Ricky hoagie isn’t – I grew up making, and eating said sandwiches in my family’s restaurant, under the loving tutelage of my father, a certified hoagie junkie.
Like father, like daughter. Nothing satisfies like the marriage of the fresh, chewy bread, the salty tang of the meats and cheese, and the dressing kissed vegetables.
Here it is, word for word from the menu (yes, I still have one) "Meatball, cheese, ham, salami, lettuce, tomato and dressing on a hot submarine sandwich roll."
Loosen your waistband for this one! Grab a knife and fork, and have plenty of napkins at the ready. Enjoy!
