Having Guts and How they Shaped my 30s

Guts. Webster dictionary defines this word in several ways. Bowels for one. Intestines, colon, and the infamous gall bladder. Above that, there’s a liver, stomach, and pancreas. Another definition of Guts is “fortitude and stamina in coping with what alarms, repels, or discourages.” But there’s one definition of Guts that really stuck out at me:





“The inner essential parts.”



To me, that means what is needed to survive. Survival means you need to have guts. It also means you need to have functioning guts.





I had always struggled with weight. I played sports in high school and was able to somewhat manage it to the best of my ability. The summer before my Senior year of high school, I barely ate and worked out to near fainting. It wasn’t healthy, but I did what I needed to do to at least be a size 10 for a minute. By the time Freshman year of college rolled around, I was back into the 14s and attempted to stay there. Near the end of my senior year at college, my grandmother died. I wanted to go home. I was tired of living with roommates. I just wanted to move on with life. I wouldn’t say I was “depressed” but I was sad. By the time I graduated and spent the summer looking for a job, I had easily fit into an 18. I started working three jobs to make money. I ate crappy. I drank heavily. I partied hard. I had a few boyfriends, but I could tell they weren’t 100% on board with me. Probably because I wasn’t on board with myself. Then I met someone and married him. Happily Ever After, right?





I don’t care what the church says. Live with someone before you’re married. This is a different world and you need to know things that you wouldn’t know before marriage. And whatever you do, keep your own bank account.





Five years later, I had ballooned to a weight no one should be at. I won’t say the weight because my heaviest weight might be someone else’s lightest weight, and to those people, just keep swimming. After my 29th birthday, I was pre-diabetic and had high blood pressure. My husband and I couldn’t motivate each other for anything. We were our own worst enemies. I had made the decision of weight-loss surgery. I knew the risks of surgery, but I also knew the risks of diabetes and high blood pressure. So I went in, and a year an a half later I had lost 110 pounds. I could breathe again, but I wasn’t happy in life. On my 33rd birthday, my husband had screamed at me that he wanted a divorce. This was probably the hundredth time he had said such a thing to me. I nodded and said, “okay,” and continued with the release day of my first book Watching Fireflies. For a self-publishing newbie, it did really well and I was super proud of myself. If only that nagging pain in my gut would go away. Not the nervous and anxious feeling in your gut, but the “Oh my God, what the hell did I eat to give me this horrid indigestion” feeling. Nine days later, I was in the emergency room. The Infamous Gall Bladder! Why is that in humans anyway?





I was knocked out and the doctor put a scope down my throat to check out the situation. I remember waking up and seeing him next to the gurney. “I nicked your pancreas.” They soon after removed my gall bladder along with pancreatic fluid. Easy peasy. I stayed in the hospital a week. I was not fine. I was not fine. I kept telling them I was not fine. Some other random doctor sent me home with Tylenol. I was not fine.





I went back to the emergency room less than 24 hours later. I had never felt so much absolute horrid pain in my life. I threw up bile as soon as they started an IV. I got the good drugs, and I was happy. I was moved into a room where I stayed … and stayed … and stayed. I had a string of gastroenterologists come see me as well as my surgeon who removed my gall bladder (the doctor who nicked my pancreas was no longer my gastroenterologist for obvious reasons). I couldn’t eat. I kept throwing it up. They inserted a PICC line. Per Google, it is a “catheter that is positioned in a large vein that carries blood into the heart. They are used for long-term intravenous antibiotics, nutrition or medications, and for blood draws.” In other words, it’s a super rad time. They were soon planning on sending me home again. There was one night where I didn’t have anyone stay with me, so it was me against the nurses. One refused to give me the good drugs and gave me a pill to swallow instead. I threw it up, and she made me sit there. I could have another in four hours. I was going to die. No one knew what was wrong with me, but I knew I was going to die.





The next morning my surgeon came back. After very colorful words he yelled at said nurse, I finally got the good stuff. But I kept throwing up. Every two hours, the yellow bile would come up after the nausea meds wore off. The surgeon ordered up a mobile X-Ray unit. My intestines were kinked. I needed surgery because I was going to die.





There was a 50/50 chance I would survive. I needed to have guts to survive my guts.





He attempted to go in laparoscopically. I woke up with a six inch scar down my abdomen. My intestines were pulled out and put back in, and there was well over a liter of pancreatic fluid eating away at my organs for what was now a week or so later. I’m unsure of the exact timeframe. There were a lot of drugs involved. I wasn’t just going to die. I was dying. And he saved my life.





I was in the hospital for a total of one month. I had already prepped my second book release, and my first full day home was when Dragonfly Awakening went live. During the first six weeks of my 33rd year, I published two books, had two surgeries, and enough reasons to tell me that I needed to live everyday to the fullest. After a few more months of getting screamed at about divorce, I used the beaten and battered guts to walk away. I had guts to make a life changing decision. I spent time at my parents house. For the first year, I attempted to make it work. The next year, I continued staying at my parents and dealt with more abdominal pain. Repaired a hernia. Found an attorney. Filed for divorce. Had scar tissue removed. Moved into the house we had bought and got my dog back, while he moved out, which was his idea. He was done with adulting I guess. Dealt with more pain. Began throwing up and having food get stuck instead of digesting. Had a procedure that showed I had a hiatal hernia. Had my sixth surgery. In less than four years, I lost a gall bladder and a husband, and had four other surgeries making five total within four years; six in life total counting the one that started it all. I still couldn’t eat well. There was still something wrong. The procedure that showed the hiatal hernia also showed that a pocket had formed in my colon, probably when they put me back together. That was the main cause of half of the pain. They could have performed surgery and I could have had diarrhea for the rest of my existence. I’ve learned how to manage that pain. I’ve elected to not have surgery. There’s another hernia in my lower abdomen. I’ve elected to not have surgery.





Shortly after my 37th birthday, I had one more procedure that stretched my esophagus. Since I had the gastric sleeve years prior, there wasn’t a lot of room to work, so they had to detach and reattached my stomach from my esophagus to fix the problem. Six months later, they stretched my esophagus and I could eat meat again. I am as good as I’m going to get.





Having guts means having the will to survive. When something’s no good for you, get rid of it, like a stomach or a gall bladder or a husband. There will be struggles like paying medical bills and a house note on one salary. But look at how far I’ve come. When you’re lying in a hospital bed, thinking that your 33rd birthday would be your last with the joyous divorce fight echoing throughout the memory, the grey hairs being plucked from your head as a 37 year old are pretty awesome.

Meal Prep Sunday: Budget & Belly Friendly Burrito Bowl





It’s the beginning of February, and for most people like me, we’re waiting on that tax refund to hit our bank account. Whether the credit card is still pinched from Christmas or you’re planning your next Disney adventure (or both), saving a few bucks can be difficult in today’s world of living paycheck to paycheck. On top of pinching your wallet, you’re also still pinching the waistline that’s leftover from the 2018 holiday season (or the 2015 holiday season for that matter). For me, I decided not to make that bi-weekly grocery run and looked in my pantry and freezer to save some money for my Meal Prep Sunday.









In my freezer, I had a couple of hamburger patties that I had previously ordered from Omaha Steaks, and in the pantry, I had a can of black beans, rice, taco seasoning, and an onion. All that together could only mean one thing …





Burrito Bowl



My number one rule about budgeting is to eat what’s in your pantry. It might not be what you want to eat, but sometimes you have to eat to live, not live to eat. That’s healthy living advice right there. Another trick is to somewhat train yourself to eat the same thing everyday, or at least, a few times a week. To help with the monotony, you can make the same basic base but add different variations, which I’ll get to in a few.





Here are the ingredients for five portions for one person. Somedays, there’s leftover food from a meeting at work that I’ll eat for lunch, or somedays, I just want a salad or Subway. I typically make five portions a week where I’ll eat one for dinner and have the other four for my work day lunch. You could always make more and freeze them for a quick dinner later on during the month.





8 oz. lean ground beef (or ground turkey)1 – 15 oz. can of Black Beans (or any kind of bean)1 – cup of white rice (or brown rice, or omit if you’re low carbing)1 – taco seasoning packet1/2 onion SaltPepperGarlic PowderOlive Oil



So, what if you have all of these ingredients except for the onion or the taco seasoning packet? Improvise. You don’t need an onion. It’s just for added flavor. If you have a decently stocked spice rack, you could make your own concoction with salt, pepper, garlic powder, onion powder, paprika, and cumin.





Budget Saving Tip: Chop up the other half of onion and store it in a freezer safe container or freezer bag for a future recipe.



Start out with making the rice and watch it, because we all know that rice can go from simmering in a bunch of water to burnt at the bottom of your pot. If you have a rice cooker, have at it. You can definitely cook more rice if you want a hardier bowl. I just use a cup divided up for me. When the rice has absorbed all the water and your pot was spared of the burn, add some of the taco seasoning to the rice for added flavor. Put the lid on the pot and set it aside off the heat.









Chop half of the onion, take a quarter of that, and put it into a small saucepan. Pour a drop of olive oil and let the onion cook down. Take the remaining chopped onion and put it into a sauté pan with about a tablespoon of olive oil. (I don’t usually measure when it comes to cooking. Baking is a different story.)





When the onions become soft in the smaller pot, adjust the heat to medium-low, add the beans, and add some taco seasoning. I usually add a pinch more salt and pepper with a dash of garlic as well. Let it simmer. And don’t forget to rinse out your can and place it in the recycling bin.





Add the ground beef to the softened onions in the sauté pan. Break it up so it’s crumbly. Add salt, pepper, and garlic powder if you have it. Once it’s beginning to brown, add the majority of the remaining taco seasoning and stir while it continues to cook. For this recipe, I don’t use the entire taco seasoning packet. Add to your own taste, though. There are packets available for purchase that are low in sodium if you’re watching the blood pressure.









When the ground beef has browned, I grab a mesh colander and drain the grease off. If the meat is lean, you probably could skip that part. If you do drain though, I recommend adding another dash of taco seasoning to make up for any seasoning the grease was holding.









Here comes the fun part: Bowl Building



Rice. Beans. Beef. And then top it with whatever you have. I only had salsa in my fridge, so that’s what I went with. Obviously, add cheese, sour cream, guacamole, tomatoes, lettuce … whatever you want. But for food prepping purposes, maybe just add the cheese since this will be heated up later.









The best thing about meal prepping is that you can be accountable for limiting your caloric intake. Personally, I believe portion control is just as important as the kind of food your digesting. I think if you only had grilled chicken and broccoli every day, you’re more likely to order that pizza come Friday. Find healthier for you food and make your meals colorful. Color makes your eyes and belly happy. If I had went to the grocery, I would have added lettuce, tomato, avocado, and black olives, but since I didn’t, I have some protein, fiber, a little carbs to keep my sugar level up (non-diabetic hypoglycemia isn’t fun), and some salsa (which consists of vegetables, so that’s healthier, right?) I unfortunately cannot eat dairy anymore, so I use minimal cheese on a regular basis (or I take the pills from Lactaid if I need my cheese fix).





I made the first one look pretty. It went down hill from there.



Split up the rice, beans, and beef into the amount of containers you choose. I ate one portion for dinner and split the rest up into four. After reheating, add it to a bed of lettuce and dress it up into a salad. Use a couple tortillas for mini burritos. Add a few chips for nachos. Or just eat it as a bowl. This is a versatile staple for your daily lunch. Not only is it belly friendly, it’s budget friendly. Even shopping at Whole Foods, the total cost for a half pound of lean ground beef, a can of black beans, one sweet onion, a packet of taco seasoning, and a 32 oz bag of long grain rice is $11.17. That’s less than $2.24 a meal if separated into five servings. And you’d still have rice left over for other recipes. Let’s say you add a head of lettuce, a tomato, an avocado, and a can of black olives. That comes out to $18.63 or $3.73 per meal. And that’s at Whole Foods. Wal-Mart would be about $2.00 cheaper in total with still buying organic at Wal-Mart for the items possible. All this math just means you’re one step closer to having those Mickey shaped waffles in the most magical place on earth.













The whole point of my first ever step-by-step meal prep is that it is very possible to have budget friendly, healthier meals. Make positive choices and make every day (even a Monday) an adventure.

The New Adventures of Jaycee Ford

When the clock strikes midnight on January 1st, I used to look to the prior year and regret all that I didn’t accomplish. But not this year. I looked back at 2018 and saw all that I did, and a big part of it was simply adulting. 2018 was the first year I actually took on life by myself. I went from graduating college to moving back in with my parents to getting married. This was often the way of life for a twenty-something year old girl. The literal last days of 2017 were the last days of my marriage. I was 36 at the time and had already been separated for two years. I attempted to make it work but sometimes life tells you to throw in the towel, and I chucked it.









I started off 2018 moving into the house I had purchased
with my former husband, but I never got to live in (NB: Huge life changes won’t
necessarily save a marriage). The first month was spent just as the previous 10
years of our marriage, cleaning up his mess. After that task, I began to
appreciate life in a larger house than needed for one person and took care of
my sweet ten-year-old pup pup, Dixie.









The year continued, and in good Jaycee Ford fashion, I had my sixth surgery. (For all of those who’ve followed me on Facebook over the years, you know how my life gets. If you’re just joining the ride, a future blog post of Jaycee’s guts will be coming soon.) This was supposed to be last, last, last surgery to fix the majority of my gut issues … and it did … after having another procedure six months later. I had spent the majority of 2018 eating easily digestible things … like carbs. Very sad for a girl who likes her protein. Thankfully, it all got fixed in August with a little procedure that widened my esophagus. Yeah, it was just as fun as it sounds.









August went into September when my very dear Australian friend came to visit me. We went to Disney World and spent the rest of the month partying it up in New Orleans. (If you’re in the mood for some amazing Australian romance books, check out LenWebster.com.)









After Len left in October, November came and I did a thing …





I FINALLY PUBLISHED A BOOK!









I’ve published six before, but it took me a year and half to
get Prowler out (Book Two of The Spider Series). Surgeries in 2017. Divorce at
the end of 2017. Life kept throwing me curve balls, but I was hitting homeruns.





Then December came. My daily job is in Accounting, and everyone who works in Accounting absolutely loves the month of December (said no one in Accounting ever).





The clock struck midnight … Hello 2019, you beautiful thing. There was only one thing I regretted: my writing. So, I told myself that I have a website and I needed to utilize it. My last blog post was a book review from June 2017. I wanted to move away from that. I haven’t read enough lately to warrant blog posts of book reviews, but I still wanted to do something that got me back into writing. My current series is a bit tough. I like the challenge, but I don’t get to focus on it as often because adulting gets in the way.





Throughout the adulting comes fun, and this is where The New Adventures of Jaycee Ford comes in. I have trips planned for 2019 (I’ve already been on one) and I want to take you along for the ride. I love all things Disney and have been a closet Disney junkie that just needs to come out. I’m an Annual Passholder at Walt Disney World so I’m a semi-Disney professional. I love to cook and meal plan. My meal planning is usually geared toward the healthy side … and sometimes the economical side. Being from New Orleans, though, I love a tasty dinner full of savory decadence.





Upcoming blogs will be a little about everything I deal with
in life, and whether those blogs are about Disney, traveling, meal prep, life
as a recently divorced 37-year-old, maybe there will be something to help you
out or something you can relate to.
