Grilled Shrimp, Corn & Feta Orzo.

This grilled shrimp orzo and a fabulous summer meal. Smoky shrimp tossed with tender orzo, sweet corn, fresh herbs and tangy feta, all drizzled in a chili lime dressing. Serve warm or chilled! Delish.

This orzo salad is so delicious and filling for a summer meal. Juicy, grilled shrimp, sweet corn and tangy feta is tossed with tender orzo and drizzled with a chili lime vinaigrette. It’s incredibly flavorful and super satisfying. 

And it’s really easy to make for dinner tonight!

It’s been a few months since I shared a recipe for you with orzo. Which is crazy, because it’s a huge staple over here. You know that I can’t get enough. My entire family loves it and it’s so versatile! 

I will pretty much combine orzo with anything and call it a meal.

In this case, I’m using shrimp and corn, which can feel summery and seasonal if you want to slice that fresh corn right off the cob. However, it will also work if you find yourself craving this meal in the cooler weather. 

I love a warm pasta dish like this. It can be served like pasta or salad or like a bowl of pasta for dinner. And it’s easy, tastes better as it sits and is a dish that can always be prepared ahead of time for the ultimate flavor.

The first thing I do is make the dressing. That way, it’s ready to go as soon as everything is combined. The chili lime vinaigrette is from Everyday Dinners and one of our go-tos. It elevates so many different dishes. 

I also cook the orzo, or at least bring the salted water to a boil.

Grilling the shrimp takes mere minutes. I love doing it this way in the summer months, but you can also throw this in a pan with some olive oil. It cooks so quickly and is ridiculously simple. I use a grill pan when mine is on the grill, because this minimizes shrimp fallout! It can easily fall in the grill gates and then you’re out of luck.

This is my favorite grill pan and I use it almost daily. It is 100% worth it and the best I’ve found. It also cleans up very well and I put it in the dishwasher too. 

The other parts are so easy! The corn: I will either cook frozen corn or slice it right off the cob. The fresh corn is so crunchy and sweet this time of year. Sometimes I also grill it, right along with the shrimp.

Summer Fridays, Vol 7.

Hello summer friday!

EATING

My corn and peach pizza with garlic sauce. It’s unreal. Cedar plank salmon. Grilled shishito peppers with lemon!

DRINKING

The best rosé aperol spritz! And lavender blueberry vodka sodas.

MAKING

My grilled peaches with lavender honey whipped ricotta. YES.

BAKING

It’s WAY too hot to bake, so my s’mores bites are on the menu.

CRAVING

My hot bacon caprese salad. And no churn coffee oreo ice cream!

GRILLING

My grilled gorgonzola potatoes are constantly on repeat. So are my summer chicken skewers with basil couscous.

LISTENING

To the perfect golden hour playlist.

READING

Started The Summer Pact this week! Here’s my big summer reading list.

WEARING

I’m obsessed with this pink ribbed dress. And throwing on this easy black dress after showering when it’s hot out. So easy for errands. Also! The kids. I put them in super bright contrasting colors (not blue) in the pool so I don’t lose track of them (think orange, pink, red). This hot pink rash guard has been amazing for all 3 of them! It’s such a vibrant bright pink. I love it. There are a ton of other great colors too. And my kids are never without sunglasses. Max is super into the baseball-ish sunglasses, which means Emilia loves them too. I got them hot pink and hot pink orange ones here. A huge hit! Plus, they come with cases and cleaning clothes too.

LOVING

I love the clear pouches for my bags, especially in summer. I always have so many things for the kids and try to keep them organized – using the clear pouches make it SO easy. Sure, the stoney clover are great, but um, these amazon ones are just as good. A fraction of the price, so many colors and shapes! I love them so much. The zippers are buttery smooth too. I also LOVE these double layer cosmetic bags. Perfect for packing, travel, on-the-go and even snacks.

SHOPPING

You can find my anniversary sale favorites here! My top picks are these nike shoes, the osea body balm, my favorite slippers, the air essentials crewneck, everything longchamp, the veer wagon, the doona, boll and branch sheets and the staub baking dishes!

BUYING

I wasn’t even paying attention to the whole target circle week thing because hello, too many sales, brain overwhelm. But I happened to look last night and couldn’t believe everything! The tineco vacuum I live for is on major sale. The breville smart oven pro AND the espresso machine (!!), the ninja creami, the cordless kitchenaid mixer (a lifesaver!), actually all the sunscreen we use for us and the kids, skincare – it is crazy. I use these beats pro ear buds every day, this mini canon printer is one of our favorite things that I’ve talked about for years and a set of greenpans. I ended up making lists on LTK selfishly for myself to keep track of everything!

Broccoli BLT Pasta Salad with Asiago Ranch.

This broccoli BLT pasta salad is the perfect summer side dish! Made with my asiago ranch, it tastes like a fabulous BLT with broccoli. SO much flavor and texture! Huge party hit!

We’re making a salad today!

A BLT salad. But a pasta salad too!

This broccoli BLT pasta salad is incredible – super flavorful, filled with crunchy texture, mixed in an asiago ranch dressing (!!!!) and tastes divine.

This is a party pasta salad.

There is no other way to describe it. The recipe will make a TON. It feeds a giant crowd. It’s perfect for a summer BBQ or a potluck any time of year. 

And this is a pretty huge deal because if you search for pasta salad here on the site, you will know that I don’t love creamy dressings or pasta salad with creamy dressings. I am very much in the vinaigrette camp when it comes to pasta salads.

But I make an exception for this one.

I know that BLT pasta salads have been around for years. In fact, I had a terrible experience with one about a decade ago that turned me off of them completely. I swore I would NEVER make one and serve it, let alone share it with a ton of people on the internet. 

But here we are! 

Something about bacon and broccoli, and turning that into a pasta salad, just spoke to me.

And let me interject and interrupt myself. One of you mentioned in my weekend post, after you saw this photo, that it looked like a “wedge salad pasta salad.”

Um, hello. Why didn’t I think of that?!

Here’s the good news: this totally CAN be a wedge pasta salad. Just swap out the ranch for blue cheese dressing! And boom. A classic wedge salad pasta salad. 

Anyhoo. Back to my rambles.

This pasta salad does take some prep work. However, you can prepare everything ahead of time and combine it before serving. 

First things first! I cook the pasta and set it aside to cool. This is a cold pasta salad, so you want cold pasta. 

I also fry the bacon. I chop it and then fry it, making it easier and quicker. Then, I remove it with a slotted spoon and place it on a paper towel to drain the excess grease. 

And I blanch the broccoli! This is not required, but I prefer it this way. You can chop raw broccoli into florets and use it that way, just like a classic broccoli salad. I prefer to blanch it so it’s slightly softer but also retains that gorgeous shade of green.  (more…)

Atlantic Beach Pie Bars.

Atlantic beach pie bars are the perfect summer treat! A salty cracker crust is topped with fresh citrus curd, fresh whipped cream and a sprinkle of sea salt. Tangy, light, refreshing and delicious.

I’ve found our 2024 summer dessert!!

These atlantic beach pie bars are my new favorite treat. A salty sweet crust made of saltine crackers, topped with a baked citrus curd and piled high with fresh whipped cream and flaked sea salt.

Lacy has been telling me that I need to make atlantic beach pie for YEARS. It always sounded delicious, but I have to be over-the-top crazy about something to make it and that was how I suddenly became over this pie.

CRAZY. Like I needed to make it and serve it and eat it. 

I couldn’t stop thinking about it!

This pie was created by Bill Smith, a chef in North Carolina who was inspired by the lemon desserts he’d eat at Atlantic Beach. The best way I can describe it is marriage between key lime pie and lemon bars, with a crunchy, saltier crust. 

It is my new hyperfixation and I need you to try it so it can be yours too!

Pie still isn’t my BFF, so I knew I wanted to adapt this recipe into bar form. I wanted to be able to make a big pan of pie bars that I could take to summer gatherings and wow, this is the ticket. It’s the ideal dessert for summer: tangy, light but rich at the same time, sweet and salty and filled with citrus.

The best part is that the filling is a mix of lemon and lime juice. It can be a 50/50 mix or a different ratio depending on what you have. Because of that, the filling might taste slightly different based on who is making it. I prefer to use the 50/50 mix of lemon and lime juice and I love it that way.

To make the saltine crust, you just crush them! They don’t need to be put in a food processor. You don’t want them to turn into dust – the more texture the better. Then, they get mixed with some butter and sugar to create the ideal crust. 

The filling is embarrassingly easy. Sweetened condensed milk, egg yolks and the aforementioned citrus juice. Pour it over the crust and bake for a few minutes.

It’s important to fully chill the bars before slicing. They taste amazing cold! (more…)

2024 Nordstrom Anniversary Sale Favorites.

Oh how I love this day!!

Every year I share my favorites from the Nordstrom anniversary sale and after asking if you wanted to see them this year, I was super excited to share them again! I don’t worry about trendy or crazy new items in the sale – I love it for classic basics and there are things I’ve had forever that are at a great price. You’ve probably read about many of these below in my favorites post each month! That’s one of the reasons I like to post this… to share some of those things I’ve used and loved over the last year. I linked some of the things over on LTK if you’re a frequent user of the app too.

This year, the sale has SO many good things. I think it’s the best it has been in years. Multiple pieces I love (spanx air essentials, varley, longchamp, etc). Things I’ve had for years and use daily or weekly.

I usually have a love/hate relationship with this sale because it’s a lot of the same things every year. The only reason that’s good, is because I have had some of these things for years, gift many of them and can successfully review them! This year, I’m mostly sharing below the things that I have and adore, a few things I’m getting and others I’ve seen in person. There are many things in the sale that I’ve had for five plus years and they are my go-to items. There are only a handful of things below that I don’t have and want to purchase myself- I think 5 or 6 items this year. I go into detail about each item below.

Moonlight pants pajamas. I have worn these for years and they are by far the best. I get every iteration of them.

Moonlight shorts pajamas. The same, but shorts for summer! Necessary.

Satin button up shirt. I can’t get over this color and how beautiful it looks. Pretty sure I wore a satin shirt in my 3rd grade school pic.

Rails long sleeve dress. I always get a Rails dress during the sale. Love them!

Sweaty betty racerback dress. I bought one of these last year and it’s fabulous. This color is so so good.

Zella racerback dress. Very tempted to try the zella version too.

Spanx air essentials crew neck. I couldn’t believe this was in the sale. I have eight of these. I LIVE IN THEM. So silky and comfy.

Nike crew neck. This is another huge huge huge fave of mine. I have many colors and it’s super cozy and cute.

Varley half zip. Varley has my heart. So excited this piece is in the sale!! I love the cream shade.

Cashmere blend hoodie. I also love this! Super casual but nice at the same time.

Spanx skort. I don’t have this and it’s on my list. I love everything spanx does when it comes to clothing.

Zella live in leggings. Some of the best leggings ever.

Zella pocket joggers. I also LOVE the joggers. They are incredibly comfortable.

Zella wide leg pants. Definitely trying these too!! Hoping they aren’t too long.

Spanx faux leather leggings. An oldie but goodie. Everyone needs a pair of these!

Spanx ponte pants. These were my staple black pants in the fall and winter. Got tons of complements on them.

Spanx yoga pants. Loving the look of these.

Joes’s wide leg jeans. I got a pair of these last summer and love them.

Nike tech fleece zip up. Have had this for years. It’s fitted and looks elevated.

Halogen longline cardigan. I always have a version of this. I wear it constantly!

Vince cashmere cardigan. And this one too!

Rails star sweatshirt. Another excellent sweatshirt. They always have new colors and designs of this. It’s very cute!

Allsaints mock neck sweater. I get a version of this sweater every year and live in it.

Cole Haan packable rain jacket. Very much loving how chic this rain coat is.

Reiss wool blend coat. This is STUNNING. It’s the main coat I want in the sale.

Save the Duck reversible jacket. I have two long vests by this brand and they are one of the best purchases I’ve made. The quality is superb.

Faux leather puffer vest. I am a vest freak. The limit does not exist.

Faux leather crop vest. Same! And black!

Faux fur hooded vest. I love faux fur… and a vest. Always.

Denim puffer vest. Two words I can’t pass up: denim + vest. Getting it.

Barefoot dreams robe. Everyone must have one.

Stance socks. Some of the best socks ever.

Olukai shearling slippers. This is huge. These are my slippers!! I have gone through many pairs and adore them. Excellent support!

Allsaints chelsea boot. Allsaints makes some of my favorite boots every year.

Vionic wedge chelsea boot. Vionic shoes get me since I’m old now. I love the support. And they’re cute!

Blondo waterproof bootie. I love blondo booties for my area because they are waterproof!

Blondo waterproof suede bootie. And a suede version.

Nike Air Max 270 sneakers. Some of my favorite sneakers ever.

Nike Air Max 90 sneakers. I am grabbing these! They look perfect for fall.

Nike Free metcon 5 sneakers. Also love the way these look. Can you tell I’m a sneaker freak? I have the purple shade of these.

New Balance 327 sneakers. I have many pairs of these and adore them. They look SO good on.

On cloudmonster sneakers. Excellent for running and working out. I use these for work everyday!

On cloudnova sneakers. This was my first On love. I love how these look on the foot.

On cloud 5 coast sneakers. One of my favorite easy slip on sneakers. Not to work out, but just lifestyle sneakers.

Longchamp large tote. I’ve used one of these to travel for years. It’s so lightweight and folds up into nothing.

Longchamp expandable tote. I have the expandable one too!

Longchamp small crossbody. And this is #1 on my list. LOVE the black.

Longchamp cosmetics case. I also love this little pouch to stash in my larger totes.

Kate Spade mini tote. This black one looks so much like a louis vuitton version!

Augustinus Bader The Rich Cream. The rich cream changed my skin life. It’s pricey and I always stock up during a sale.

Elemis jumbo cleansing balm. A great makeup remover that makes your skin feel amazing.

Elemis resurfacing facial wash. This my shower face wash. It’s excellent.

Good Genes jumbo. I have used this forever and love it.

Kopari moisture set. Use this constantly! Oil + cream after every shower. I love how light this scent is.

Osea Discovery set. I use the cream, oil and balm almost every day.

Osea anti-aging balm. I LOVE this. It feels like serum on the skin – unlike anything I’ve tried.

First Aid Beauty ultra repair cream. Some of my favorite heavy duty cream.

Dr Dennis Gross LED mask. I have one of these from the sephora sale years ago. Is it a gimmick? I don’t know. But it’s relaxing!

Slip king pillowcase set. I can’t sleep without a silk pillowcase. Emilia does too, and it keeps her hair from being tangled!

YSL lip oil stick kit. I have two of these and they are some of the best lip products.

Westman Atelier highlight stick duo. I love these highlighter sticks.

Westman Atelier summer bronze duo. And the bronze!

Laura Mercier caviar eye stick set. I use these daily! As eyeshadow and liner.

Fresh lip set. Definitely a favorite.

Doona car seat. This is my #1 baby purchase. It was absolutely wonderful and we used it until Jordan turned two!

Veer wagon bundle. We’ve had the Veer for four years now and it’s fabulous. Definitely an investment and we get so much use out of it.

Baby Bjorn bouncer. Couldn’t live without this for all of my kids! I’ve also gifted many of these.

Tuesday Things.

1. Can’t get enough tomato toast. Sourdough, mayo, cheddar, tomato, salt. I will be eating this for two more months!

2. This roasted blueberry cheesecake is incredible.

3. Our area is getting ready for the return of the lantern flies and I can’t even tell you how gross it is.

4. I’m pumped for the nordstrom anniversary sale this year because everything looks so much better than previous years! I can’t shop for a few days but created a giant post because so many of the items are things in my favorite posts over the years.

5. Best way to keep side dishes cold at a BBQ. Um, yes!

6. TV things!! Binged the new season of The Bear all weekend. SO darn good. Like every actor is.so.freaking.good. I loved all the chef cameos too.

7. Speaking of, I love this! Non-negotiables from chefs.

8. Can’t get over that “vintage” means, like, 1998. But I guess when I was a kid, I definitely thought the 70s meant vintage.

9. This is my dream. The top 10 books of the 21st century!

Grilled Jalapeño Peach Chicken.

This grilled jalapeño peach chicken is a delish weeknight summer meal! Fresh juicy peaches are mixed with spicy peppers, cilantro and lime then served over grilled sticky peach chicken. Cilantro lime rice on the side please!

This tastes like sunshine!

This jalapeño peach chicken is super flavorful! Chicken grilled with a mixture of peach preserves and apple cider vinegar, then topped with a refreshing, crisp salsa made with fresh peaches, shallots, jalapeño peppers and cilantro.

Tastes like a big bite of summer!

A meal like this is one of my summer staples. 

Grill some chicken.

Make some sort of salsa or compote or pico de gallo. 

Top the chicken with said salsa.

Serve with rice or garlic bread or potatoes or on salad. 

Really, you can’t go wrong any time.

If you love my cilantro lime grilled chicken with peach pico, than you will LOVE this dish. 

There’s a little heat, but I remove the seeds from the jalapeno peppers and ultimately, they just bring a summery fresh flavor to the dish.

This is how it comes together!

First, I season the heck out of the chicken. It should come as no surprise that I use my favorite combo of salt, pepper, smoked paprika and garlic powder. 

Then, I whisk together some peach preserves and apple cider vinegar. This is a spin on the broiled chicken thighs I’ve been making for years. Basically, we’re going to use this to brush on the chicken when it’s close to being done – and it gives it some delicious sticky flavor.

Next, I dice up peaches, jalapenos, shallots, garlic and fresh cilantro. This is good enough to eat with a spoon! I love how sweet and savory this is, complete with a hint of summer heat. 

Then it’s time to grill! I grill the chicken until it has just one or two minutes left. Then I brush it with the peach preserves mixture and flip a few times. This is what gives it a sticky, almost BBQ-like flavor and texture. 

I let the chicken rest once it comes off the grill. Then top it with the jalapeño peach salsa!

I like to serve this with cilantro lime rice or even my coconut rice. Both complement it so well.

This is a lovely little weeknight summer meal and the leftovers are great for lunch the next day too. I store them separately in the fridge and then pull them out the next day!
