Cheesy Pizza Fries.

Pizza fries are our new favorite thing!! Crispy waffle fries topped with marinara, melty mozzarella and pepperoni. The parmesan and fresh basil take it over the top. So cheesy, crisp and satisfying! Best game day snack ever.

These pizza fries are covered in sauce, cheese, crispy pepperoni and and enough parm to make anyone happy.

Okay, so you know things have changed when I’m making a recipe requested BY MY CHILD.

Like what?

I still don’t even feel old enough to have a child, but here we are.

For months, Max has been talking about pizza fries. I don’t know where exactly he heard about them, and I know he hasn’t tried them yet. But one of his friends has talked about them in school, so he keeps mentioning them over and over again. 

He even told me what kind of fries to use! If he hadn’t, these wouldn’t be as good.

I would have grabbed the classic super crispy long french friends. But when I asked him more about pizza fries, he said “you have to use the chick-fil-a fries.” Ahhhh… okay.

Otherwise known as waffle fries!

Which let me tell you, is completely brilliant. Because each fry is like holding a mini pizza in your hand. IT IS PERFECT.

So here we are with this ideal game day snack that everyone in my life is now losing their mind over.

We make sheet pan nachos all the time. I also make fun versions of fries – like smashburger fries, chimichurri fries and hot honey feta fries

Chicken Parmesan Gnocchi Soup.

We love this chicken parmesan gnocchi soup! Filled with all the flavor of chicken parmesan, the broth is made with fire roasted tomatoes and parmesan cheese. Add all the toppings and you’re in love!

We can’t get enough soup.

This chicken parmesan gnocchi soup is such a winner. It’s hearty and flavorful, made with fire roasted tomatoes and a parmesan broth. The chicken is tender, the gnocchi cooks up to little pasta pillows in the broth and the toppings are everything.

My kids adore it too. Which means it’s a huge win over here.

No, but seriously. I make so much soup that I had to order more soup ladles on amazon. I wish I was joking! All soup, all the time around here.

I also have such a ridiculous amount of souper cubes filled with frozen soup, because I like to heat it up for lunch. It’s so filling and satisfying. Soup + sourdough is life.

Tuesday Things.

Tuesday things

1. Sourdough chocolate chip cookies for the win!

2. My current fave self care moment is kindle + diet coke over crushed ice + tajin peanuts.

3. How to let your mind let go. Need it!

4. Girl scout cookies ranked. I actually agree with this.

5. TV things!! I started watching The Pitt because it’s set here in Pittsburgh! I also watched The Substance because apparently I LOST MY MIND. I don’t think I’ve watched a horror movie since seventh grade. But yes, the women were great. I really need to watch The Traitors too.

6. Also, Ali Larter’s accessories in Landman make me want to adopt the mob wife trend. I need a big leopard tote. It is my favorite color after all.

7. A vertical waffle maker is my newest kitchen obsession. It’s fabulous. Pouring the batter in on top is a game changer.

8. Also! I’m addicted to the trader joe’s aglio olio seasoning blend. It is SO GOOD on everything.

9. Historical inauguration photos. I loved looking at these.

Easy Bang Bang Salmon Bowls.

Bang bang salmon bowls are super simple and delicious! Tender juicy salmon with a creamy sauce, served over rice and veggies. Satisfying and incredibly easy to make!

This bang bang salmon is so tender and juicy, served over jasmine rice with carrot and cucumbers and a creamy, spicy sauce. It’s incredibly satisfying and tastes amazing!

I can’t even explain how often we eat this meal. I make this ALL THE TIME. 

It checks all the right boxes:

It’s easy and takes under 30 minutes.

I always have all the ingredients on hand!

The entire family loves it.

And the leftovers are just as delish.

So, not only is it a fantastic weeknight meal, it works great as leftovers. Or even as a meal to prep for lunches during the week!

Luckily, I don’t have to fight my kids too much when it comes to salmon. They enjoy it. But I find that one of the keys to making it irresistible is to cut it into these chunks before searing it in a cast iron skillet.

This allows all the sides to get crispy and browned. The spices add so much flavor and it’s the perfect juicy bite. Buttery, flakey and bite-sized. Just right! 

The star of the show though? Obviously…

The sauce!

Everyone loves bang bang sauce. This creamy sauce with a little heat is so darn good for dipping and drizzling, whether it’s fish or chicken or vegetables. And a little bit goes a long way. The tiniest drizzle transforms a dish so much and really elevates it. In other words, it makes it feel extra special.

A Week In The Life, Vol 3.

Emilia got her role for her spring play so first order of business is highlighting her lines.
