Ciao, Cheap Chow, Ciao
So we often barbecue and I can’t always finish an entire large chicken breast or pork tenderloin. Even the beloved occasional ribeye, overcoming my vegetarian tendencies, sometimes calls for a portion set aside. At these times, as with the occasional largish salmon filet, I try to craft a meat salad, to grace some wheat toast or to go “solo”.
Here are a couple of these largely fortuitous “salads” bourne of leftovers/necessity:
Chicken Cheddar ZucchiniFinely diced, leftover seasoned, cooked chicken breast1 Tb olive oil mayonaisse1 Tb nonfat plain yogurt1 Tb lowfat sour creamDiced microwaved or sautéed zucchini1-2 slices Tilamook or other Cheddar cheese, diced2-3 mini bell peppers, finely diced1-3 shakes, onion/garlic powder/salt to taste/health
Easy prep: Mix chicken with condiments and seasonings, drain well vegetable ingredients and stir in. Gently fold in cheese. Eat solo or over toast.

Pumpkin Seed Salmon TomatoFinely shredded, seasoned grilled, leftover salmon filet2.5 Tb olive oil mayonaisse1 thick slice Tilamook or other pepperjack cheese, chopped small1/3 cup tomato, diced small1/4 cup raw shelled pumpkin seeds, diced

Easy prep: mix salmon with mayo and then stir in other ingredients.
These salads, brought about by a shrinking metabolic rate at dinnertime mean that I have more variety in my lunchtime eating. I thrive on this type of variety, and I find cooking relaxing and fun. Enjoy!
