Turkey & Black Bean Tacos

Turkey and Black Bean Tacos - Taco Night is the highlight of the week. Make this week I've been on a ground turkey kick. Part of it is an effort to reduce our red meat. It's probably not that good for us to eat it as often as we were, plus it's getting more expensive. I just can't swing it when the kids could easily eat two to three pounds in one sitting. We're enjoying it twice a week, which is good.

I didn't used to like ground turkey, but since I tried Trader Joe's, I'm hooked. (Sorry to all you people who don't have TJ's or don't like it. I fell out of love with Trader Joe...

Time to Make Some Diet Changes?

You may or may not know that I write two blogs. Yep, true story. I do most of my recipe sharing and food talk over here on Good Cheap Eats, but I can't help but talk about food wherever I go.

Coconut Banana Coconut Banana While I have many different banana recipes to rely on -- Coconut Banana Bread with Chocolate Chips, Chocolate Chip Banana Bread, Banana Pecan Coffeecake, and Banana Cupcakes with Chocolate Cream Cheese Frosting -- I decided to try something different.

What to Do with That Leftover Ham

What to Do with Leftover Ham - Got ham? Transform your ham leftovers into something extra delicious. My boys love ham. Love it. My husband can go either way on it, but now that the boys have a larger voice in culinary choices, we make ham about twice a year. I cook up a large honey-baked ham, sometimes in the crockpot, a pan full of the best scalloped potatoes on the planet, and a few vegetable sides.

In the days following we transform the leftovers into something new and different, but still delicious. The potatoes rarely last past one meal, anyway.
