Feature Friday Block Party Blog Hop - Week 3!

Thanks for stopping by - Today I'm participating in Week #3 of the Feature Friday Block Party Blog Hop, which is co-hosted this week with author MJ Shciller! Please Twitter #FF us with @RohnFederbush and @MJSchiller. I'm sharing a this delicious looking Strawberry Chantilly and a little bit about my book BONDS OF AFFECTION.

INGREDIENTS :
1 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup butter
1/2 cup chopped walnuts
2 egg whites
1 cup white sugar
2 cups fresh strawberries
1 cup heavy cream
1 teaspoon lemon juice
DIRECTIONS :
1. Preheat oven to 300 degrees F (150 degrees C).
2. Mix flour, sugar and butter until crumbly. Stir in chopped walnuts.
3. Press two-thirds of the mixture in the bottom of a 9x13-inch baking dish; the remaining crumble will be used for the topping. Bake in preheated oven for 20 minutes. Cool crust completely.
4. In large deep bowl, stir together egg whites, sugar (see Cook's Note), strawberries, and lemon juice. Whip with electric mixer at high speed for 10 minutes.
5. In another mixing bowl, whip whipping cream until stiff and fold into strawberry mixture. Spread over cooled crust. Sprinkle with remaining crumb mixture. Freeze for 6 hours or overnight before serving.

Feature Friday Block Party Blog Hop - Week 2

Please Twitter #FF me with @RohnFederbush. I'm sharing a delicious Chicken Souvlaki with Tzatziki Sauce and a little bit about my book LOVE'S TRIUMPH.

INGREDIENTS:
1/4 cup olive oil
2 tablespoons lemon juice
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1 1/2 pounds skinless, boneless chicken breast halves - cut into bite-sized pieces
SAUCE:
1 (6 ounce) container plain Greek-style yogurt
1/2 cucumber - peeled, seeded, and grated
1 tablespoon olive oil
2 teaspoons white vinegar
1 clove garlic, minced
1 pinch salt
6 wooden skewers, or as needed
DIRECTIONS:
1. Combine 1/4 cup olive oil, lemon juice, 2 cloves minced garlic, oregano, and 1/2 teaspoon salt in a large resealable bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours.
2. Mix yogurt, cucumber, 1 tablespoon olive oil, vinegar, 1 clove minced garlic, and 1 pinch salt together in a bowl. Refrigerate tzatziki sauce for flavors to blend, 1 to 2 hours.
3. Preheat an outdoor grill for medium-high heat and lightly oil the grate. Soak wooden skewers in a bowl of water for about 15 minutes.
4. Remove chicken from marinade and thread onto the soaked skewers. Discard unused marinade.
5. Cook the skewers on the preheated grill, turning frequently until nicely browned on all sides and chicken is no longer pink in the center, about 8 minutes per side. Serve with tzatziki sauce.

Feature Friday Block Party Blog Hop!

Thanks for stopping by - Today I'm participating in the very first Feature Friday Block Party Blog Hop! Please Twitter #FF me with @RohnFederbush. I'm sharing a delicious Strawberry Short Cake and a little bit about my book FLOATING HOME.

INGREDIENTS:
3 pints fresh strawberries
1/2 cup white sugar
2 1/4 cups all-purpose flour
4 teaspoons baking powder
2 tablespoons white sugar
1/4 teaspoon salt
1/3 cup shortening
1 egg
2/3 cup milk
2 cups whipped heavy cream
DIRECTIONS:
1. Slice the strawberries and toss them with 1/2 cup of white sugar. Set aside.
2. Preheat oven to 425 degrees F (220 degrees C). Grease and flour one 8 inch round cake pan.
3. In a medium bowl combine the flour, baking powder, 2 tablespoons white sugar and the salt. With a pastry blender cut in the shortening until the mixture resembles coarse crumbs. Make a well in the center and add the beaten egg and milk. Stir until just combined.
4. Spread the batter into the prepared pan. Bake at 425 degrees F (220 degrees C) for 15 to 20 minutes or until golden brown. Let cool partially in pan on wire rack.
5. Slice partially cooled cake in half, making two layers. Place half of the strawberries on one layer and top with the other layer. Top with remaining strawberries and cover with the whipped cream.
