Limoncello Cake Recipe
I love cake and simply could not find a good recipe for one of my favorites. I needed a limoncello cake recipe. So I issued a challenge to my friend and chef, Kim Bailey to figure it out! He loves a challenge and voila I had a cake in two days. It was delicious but I wanted a tweak to it. So here it is–limoncello cake with lemon mousse frosting and it is to die for.

Mark’s Perfect Pancakes and Yogurt Parfaits

I think this weekend calls for a quick and easy dinner, so I’m making breakfast for dinner! My husband, Mark makes the best pancakes. In fact, the kids always called them ‘perfect pancakes’growing up. Top these Perfect Pancakes off with anything you’d like, but my kids always enjoyed mini chocolate chips! For some protein to balance the meal out, make my version of Yogurt Parfaits. I add lemon curd and raspberry preserves in place of fresh fruit–I even make it for dessert.

When my kids were little, I wasdefinitely guilty for wishing I was a child just so I wouldn’t have to hide my love for the ‘kids menu’. Anyone with me? Chicken Pesto Soup and Apple Pie
The long-awaited month of October is finally here–all of us in Florida are rejoicingbecause the “cool” weather is lurking around the corner.

When the Going Gets Tough: Academics
When my kids were growing up, I often wished they would just stop growing up!
This was especially true in regards to school–it just kept getting harder. And that meant more and more and more time on school and less and less and less time on us.
