Chocolate Coconut Pudding
2oz butter or substitute
¾ cup sugar
1 egg
1 teaspoon vanilla extract
½ self-raising flour
½ cup plain flour
Pinch of salt
1 cup of dessicated coconut
¾ cup milk
Sauce¾ cup of brown sugar, firmly packed
1 tbsp butter or substitute
3 teaspoons cocoa
1 ¾ cups of boiling water
Sauce methodPut brown sugar, butter and sifted cocoa in a bowl. Pour boiling water over, stir to dissolve.
Sponge methodCream butter and sugar, add egg then vanilla.
Combine coconut with sifted flours and salt, fold into creamed mixture alternately with milk.
Spoon into greased 3 pint ovenproof dish. Pour sauce over. Bake in moderate oven 45 to 50 minutes.
