I Made a YouTube Channel!
Hello awesome nerds and happy Thursday everyone!
2020 may have been many things, but it has been full of surprises, too. That I have to admit. Not only our everyday life has changed in ways nobody could imagine, but this year we all found new ways to work and embrace all the opportunities this 21st century technology offers to us, we found new ways to entertain ourselves, stay in touch with our loved ones and friends, and try new things.

Scarlet Guard Red Velvet Cake ~ #BakingWithTheBeacons

I hope you all had a great weekend, you had the chance to recharge your batteries and you’re ready now to embrace this new week, and the new month, with enthusiasm and positivity. Even though 2020 has been the being trickster of the century and a sh*thole of a year, still, we can make our everyday life seem a little brighter and a little sweeter, if we focus on the good things.
And speaking of sweets, it’s been a while since the last time I posted a recipe here, so, grab your aprons and cookbooks, and get ready for the COOLEST recipe Beacon Book Box has featured in their boxes so far.
For those few who don’t know, Beacon Book Box is a monthly subscription box, in which every month you receive a new release, as well as a bunch of bookish items, focusing on a specific theme.
I’ve been a rep for the Beacon family for the past eight months and it has been a blast! They are the only subscription service that feature book-inspired recipes. For an avid baker like me, this is everything.
So, today, I’m going to share with you the Scarlet Guard Red Velvet Cake recipe, inspired by the Red Queen series, by Victoria Aveyard.

SCARLET GUARD RED VELVET CAKE
Preheat oven: 350F
Cook Time: 40-45 minutes
Cake Ingredients:
1 tbs Unsalted Butter
3.5 c Flour
1/2 c Unsweetened Cocoa
1.5 tsp Salt
2 c Canola Oil
2.25 c Granulated Sugar
3 Large Eggs
6 tbs Red Food Coloring
1.5 tsp Vanilla Extract
1.25 c Buttermilk
2 tsp Baking Soda
2.5 tsp White Vinegar
Frosting Ingredients:
8 ounces Cream Cheese, Room Temperature
3 c Confectioner’s Sugar
1 tsp Vanilla Extract
1 stick butter (room temp.)
Cake Instructions:
Preheat the oven to 350F. Coat 3 round 9-inch pans with baking grease or non-stick spray. Line bottom with parchment.Whisk Flour, Cocoa and Salt together.Combine oil and sugar with electric mixer at medium speed, then beat in one egg at a time. Put mixer on low, very slowly add red food colouring. Add vanilla. Alternate adding flour mixture and buttermilk. Scrape bowl with spatula (to make sure all powder is mixed in). Beat just long enough to combine.Combine Baking Soda and Vinegar. Add to batter, mix for 10 seconds to combine.Divide batter evenly among 3 pans. Place in oven, cook 40-45 minutes. Let cool in pans for 20 minutes. Remove from pans, peel off parchment and let cool completely before frosting.
Frosting Instructions:
Place cream cheese and butter in a medium. With handheld electric mixer, beat until light and fluffy, about 2 minutes. Beat, on low, to combine. If too soft, chill until slightly stiff, about 10 minutes before using.
