Snickerdoodle Recipe
Ryker nodded. “Good luck, guys. I got a truckload of my own homework, actually, but if you want some help, you know where to find me.”
“We do?” Fay asked.
“Yeah,” said Ryker, “in the kitchen, where all the snickerdoodles are. Catch ya later, guys.”
It was at that moment Ryker darted out of Cody’s room and started running down the stairs. Of course, Cody jumped up from where he was sitting and sprinted out of the room after his older brother, shrieking, “Don’t you dare!” in attempt to keep Ryker from taking all of his precious cookies.
LYDIA ARLINGTON AND THE AQUARIAN MYSTERY With this yummy recipe, you can enjoy snickerdoodles just like Lia, Cody, and Fay! Don’t forget to try dipping them in milk—Cody clearly knew what he was talking about.
For the batter:
1 teaspoon of vanilla
¾ cup raw honey
½ cup softened butter
1 egg
2 cups einkorn flour
2 tablespoons of cinnamon
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon cream of tartar
For the coating:
1 tablespoon of cinnamon
3 tablespoons of coconut sugar
Preheat oven to 375°F. Line a baking sheet with parchment paper. Mix together the ingredients listed in the “for the batter” section. Next, in a separate bowl, mix the ingredients for the coating together. Scoop out small balls of dough and roll them in the cinnamon and coconut sugar to coat. It helps to spray coconut oil onto your hands. Place the balls of dough on a cookie sheet and bake for 11 minutes. Yields about 35 cookies.
