My Favorite Artisan Bread Recipe

This no-knead bread is perfect for busy moms and those who live without more than 10-15 minute chunks of time at any given moment.
Four ingredients: water, flour, yeast, and salt.
Mix then come back to it somewhere between 8 hours and 18 hours. Oh yeah. Love that part.
Dump. Stir. Place in pot. Bake two hours later. SO GOOD!
Artisan Bread Recipe
3 cups (15 oz.)
unbleached all-purpose flour
¼
tsp.
instant or rapid rise yeast (I use SAF yeast)
1 ½
tsp.
table salt (I use Real Salt)
1 ½ cups water
at room temperature
Instructions:
Whisk flour, yeast, and salt together in a large bowl
(Batter Bowl works great). If you are adding dry herbs or spices,
add them at this time.Add water.Fold mixture, scraping up the dry flour from the bottom
of the bowl until shaggy ball forms.Cover mixture with plastic wrap (if not using Batter
Bowl) and let sit at room temperature for 8 to 18 hours.Lay a sheet of parchment paper inside a pie plate or
Deep Covered Baker.Transfer dough to lightly floured surface and “knead”
10-15 times (the dough is sticky. I spray my fingers with Pam before
starting this). The kneading I do is more a lifting of one side
toward the other a few times to remove large air bubbles from the dough
and to give the bread a more uniform look. If you are adding nuts,
dried fruit, cheese, chocolate or other bulky ingredients, fold them in
now.Shape dough into a ball by pulling edges into the
middle.Transfer dough, seam side down to pie plate or Deep
Covered Baker [DCB}and cover (Use plastic wrap, sprayed with Pam, if not
using Deep Covered Baker).Let rise until doubled in size, about 2 hours. If
you are not going to bake it in 2 hours, you can put it in the fridge—but
then you need to let it rise for about 3 hours on the counter before
baking. I always make sure to time it so I can bake it 2-2 ½ hours later.If you’re not in too much of a hurry, use a sharp knife
or cooking shears to make a 6-inch wide slit along the top of the
dough. This will give a nice appearance to the finished bread. You
can skip this step and the bread still tastes delicious.If using the DCB, place in oven with lid on. Otherwise,
pick up the dough by the parchment paper and lower into bread pan or
baking dish (the parchment paper goes into the pot, too). Use a dish with
sides as the dough is still not firm.Bake for 30 minutes at 425, remove lid and continue to
bake until loaf is deep brown, about 10 to 15 minutes longer. If the
crust gets too dark, loosely place a sheet of aluminum foil over it.Carefully remove bread from pot and transfer to a wire
rack and cool to room temperature.TIP: MAKE THE INGREDIENTS IN THE CLASSIC BATTER BOWL
THE NIGHT BEFORE. Then when you awake in the morning, proceed with
steps 5-13.
Variations: (Be creative and try
your own!)
½ cup dried cranberries and ½ cup toasted pecans or walnuts, ½ cup white chocolate chips. My favorite. ½ cup toasted walnuts and ½ cup white or semisweet chocolate pieces, ½ cup chopped apricots1 ½ tsp-1 ½ Tbsp Dill Mix and 1 ½ tsp-1 ½ Tbsp. dried onion1 ½ tsp-1 ½ Tbsp Italian Seasoning Mix and 1 Tbsp chopped fresh basil1 ½ tsp-1 ½ Tbsp Rosemary Herb Seasoning Mix and 1 ½ tsp-1 ½ Tbsp dried or fresh chopped garlic (use less if dried)1 tsp cinnamon and 1 tsp nutmeg4 oz. (2 cups) finely grated fresh parmesan cheese or Asiago cheese (or your favorite combo of cheese), 1 Tbsp fresh rosemary and ½ cup chopped green olives (pitted)Italian bread: 1 cup each grated swiss and Parmesan cheese, 1 Tbsp. oregano, 1 Tbsp. basil, 1 tsp. garlic powder. My 2- and 4-year-old grandsons love this one!

Letting Go – Lessons in the First 30 Days

Part 1
It seems I’m to learn about letting go. You know how the universe sends you what you need? Whether you like it or not? Whether you asked or not?
I’m learning to let go.
Lessons started late last summer. Someone who bullied my husband and I for over a year got physical. He tried to start a fight but my husband wasn’t buying in. The physical line was crossed, however, and our concern for our safety soon outweighed our pleasure at living on the water near this child of God who was acting like a child.
Letting Go of the View.
I didn’t want to move. Neither of us did. But the fatigue of watching each other’s backs and wondering when the next incident with this child of God would occur made our decision definitive. We had to move. We couldn’t continue to live like this.
I mourned the loss of our perfect home. For fifteen years, we watched mullets jump and osprey fight for their territory against the local eagles over the water. When fishing tournaments launched, we sat with drinks in our hands and counted over 100 boats inch their way out of the marina. On foggy mornings or sunny afternoons, we’d see tug boats glide by way across near the opposite shore.
Trusting that God would provide us something equally nice, I had to let go of the hope that we’d find a home on the water again. Hurricane Michael had just devasted the area 40 miles away. It seemed any waterfront properties that had been available had been pulled to be offered as rentals to the newly homeless.
We found a home. It had a small lake in the back – more like a pond – but we had a waterview and the bay was very near. We could kayak to it from our yard. And it was a beautiful home, much nicer that the one we left.
Learning to Let Go of the Stuff
Our charitable tax deductions grew last year from all the belongings we pulled from cabinets and closets and the garage. Goodbye stuff.
“You’re off to a good start,” said the realtor. We had more work to do, apparently, to stage the place. More ideas, attitudes, and items to release. It’s fascinating to watch how hard you hold onto stuff. A few months later, we had to let go of the lovely beach tone walls we had painted four years ago in order to paint everything a neutral color – something called greige, a mix of grey and beige that’s on trend for the moment.
On vacation, we had to let go of our fear that my husband’s condition would worsen before we’d return to the states and have his double hernia repaired. We let go of our desires to explore sites further since we were travelling with a group. and our desire for more sleep when the tour guide declared the departure time of 8:00 a.m.
After returning to the states, I had to let go of more sleep when I decided that I should drive five hours to our daughter’s home. She was nine months pregnant with pneumonia and two boys under five years old. She’d never get rest to heal without some help. I’d suffer from jet lag no matter where I slept.

Countless letting go moments ensued over the next month before and after it came time for the baby to be born. At the indoor gymnasium, our grandsons jumped into deep foam pits. One came out without his socks. I made a move to try and find them. “Let them go, Mom,” my daughter coaxed.
It’s hard letting go. I’m still working on letting go of the desire to retaliate against the child of God acting like a child.

Intuition or a nudge from God? How do we know the difference?

Some people call it intuition. Granted, we all have that to a greater or lesser degree. Have you ever wondered though, if something else was at work when you had a particular thought? As if some part of you was responding to … something or Someone?
Do you have an itch to know if your hunch is just a hunch or perhaps, just perhaps, could it be a nudge from God? How do you tell the difference? Refusing to Ask for Help May Please the Devil

Help! her spirit whispered inside her. She needed help but hesitated to ask for it.
One of my writer friends found herself stuck recently with a deadline looming. Amy, a friend of hers, possessed skills that could help her, but she hesitated to ask. Amy had so much on her plate lately.
After struggling on her own and failing to resolve her writing dilemma, my friend finally gave in and called Amy.
“Thank goodness you called,” Amy replied. I’ve been up to my ears in personal issues and I prayed for distractions to get my mind off them. Your call is an answer to my prayer. Ask away. I’m so glad you need my help.”
What a lovely and holy twist God gave these circumstances. Instead of being a bother, my friend’s need provided the very distraction for which Amy prayed. We don’t often pray for distractions. We usually pray for relief from them, right?
Pleasing the Devil
Who benefits when we hesitate or refuse to ask for help? You’ll discover to your chagrin that the devil may be pleased by your hesitation. When you do not ask for help, you remain isolated in your own thoughts and fears. God designed each part of the Body of Christ to work together with the other parts. When one part isolates itself from the others, the Body slows as if hobbled.
The devil prowls the world seeking the ruin of souls. When you isolate yourself from the help of others, he rubs his hands in delight. In order to capture and devour prey, animals and fallen angels first must isolate their victims. By not asking for help, you walk into the devil’s isolation trap.
What light shines in our darkness when we do ask for help. Granted, a few attempts may be necessary before we find the help we need. How amazed we are when we follow a persistent or intuitive thought and discover a rich result. Why this surprises us over and over again makes me scratch my head and wonder. We say we trust that God will answer our prayers and direct our paths. When He actually does so, we act dumbfounded. We act like Sally Fields getting her Oscar. Instead of saying, “You like me! You really like me,” we find ourselves talking internally to God when He comes to our aid, “You helped me. You really helped me!”
In shock, we often relay the story to others of how God helped us. How little belief we often find beneath our profession of faith in God. If we truly believed what we say we believe, we’d pray a simple “Thank you” when a prayer gets answered. Instead, we find ourselves telling friends and family the astonishing news that something positive happened when we followed the Holy Spirit’s prompting. Like it’s an anomaly or something.
In this little story, one person needed a distraction and prayed for one. Another person needed a friend’s help and asked for it. God knows everything, sees everything. He delights in matching our needs with another’s. My friend’s dilemma reminded me to let go of pride or the fear of bothering others when I need help. By seeking help, I may be answering another person’s prayer for a distracting diversion. Who knows?
God uses everything.
Our very needs answer others’ prayers, often without our knowing it.
“Fear is useless,” Jesus told Jairus when news reached them that his twelve-year-old daughter had died. Useless, too, is a reluctance to ask for help. Jesus brought Jairus’ daughter back to life because he asked for help. Being afraid he was too late in asking proved useless. Our fears holding us back from asking for help are just as useless.
Ask and you shall receive. Seek and you shall find.
Matthew 7:7
God designed us to work together as the Body of Christ. Eyes cannot do what the heart does. Hearts cannot see. Each of us has a particular work to do in and for the Body of Christ. Let us be vigilant and attentive to the promptings of the Holy Spirit, however humble or odd they might seem, so we do not allow the devil to veer us off the path on which God placed us. Seeking, questioning, and asking God are applications of faith Faithful people resist the temptation to succumb to the pressure of fear.
When you are being pursued by the devil, or you are depressed, or things aren’t going right for you, mentally picture thus painting of Jesus’ divine mercy, and repeat over and over again – “Jesus, I trust in YOU!” The more you say it–the more you really mean it–the better things will get. The red rays coming from the Sacred Heart of Jesus symbolize the saving power of His blood. The white rays represent the saving waters of Baptism. The trust we are called to is not naive trust. This trust keeps the channel of our heart open to Jesus’ living water. Close down that trust, hold back asking for help when you need it, and you risk pleasing the devil, not God.
