Great question! I'm partial to Daniel and Lizzie (from Both Sides of Love) because well, they've lived in my mind for so long. The sacrifices they make for love breaks my heart.
Another couple that comes to mind is Jamie and Claire of the Outlander series. Diana Gabaldon wrote a sexy, complex relationship between two strong people, I couldn't help but fall in love.
