That you don't always know what's going to happen in a given story, even as you're writing it.
One of my favorite things is taking a character, once they're fully fleshed out, and writing them into a situation just to see what they'll do. If you're consistent about who the character is, they just might surprise you and take the plot in a whole new direction.

I'll usually get up and walk away from the page for a bit. Physical activity has always worked well for me, so a quick workout or a hike around the neighborhood often gets things running again.
