Anyone who says its cultural appropriation just because the author is white, is not only stupid but a racist. Culture is supposed to be shared and enjoyed, if they learned more about the author them people would realize how much this food means to her. People from all walks of life love it when others want to embrace and practice their culture. As a hispanic i love it when people practice things like dia de los muertos because it celebrates our passed loved one. Anyways, "sjw" and "woke" are just terms racists and ignorant people hide behind to justify separating people more only by the color of their skin.
As for the book, i tried them and i loved them. Very detailed and its better than the take out food i get because its more genuine. I recommend this book!
A great cookbook for anyone interested in Chinese cooking. The recipes are really easy to pick up once you get the techniques down and they are really tasty as well! Makes really complex recipes seem easy.
(actually 3.5 stars) How much time do you have? That's the question you need to answer before you pick up "Dumplings and Noodles."
If I had a lot of time (and energy, and patience), I don't think I would ever need another cookbook for dumplings or noodles. This one is extremely thorough, from equipment to ingredients to method--there's even a little bit of chemistry thrown in. What there isn't, is shortcuts. Sure, Middlehurst tells you you can use store-bought chicken stock instead of making your own, but that's in the middle of a multi-stage recipe for something that will already take you a couple of hours to make, so really, this is not the kind of "shortcut" you may be thinking of. This is a cookbook for the THOROUGH, for the HOME CHEFS, not for the people who think about making their own chicken stock and instead decide to order Five Guys and watch a movie.
That said, if you think you MIGHT be (or become) the kind of person who wants to make bao from scratch and/or kick up your ramen game, this is a cookbook you should check out. Even if you will never make your own dough, the recipes will give you ideas for fillings you could try with premade wrappers and noodles! And there are recipes for sauces, toppings, and side dishes at the end as well! (I will definitely be trying to make some of the toppings and sauces.) To her credit, Middlehurst includes time estimates for both prep and cook time in every recipe, and she explains what all the ingredients are. She also notes what recipes are vegan or vegetarian. It would have been nice if she had included ways to make recipes vegetarian, especially ones that use chicken fat (also, there is a LOT of pork in here). I took off half a star for the lack of vegetarian and "please stop with all the pork" consideration.
So, overall, this is a very thorough cookbook that will tell you just what you need to know, have, and do to make dumplings and noodles. The downside is that you better have a lot of time for that, because this is NOT going to be quick, and sometimes, it'll feel a little like Food Homework. But by golly, you will come out of it KNOWING YOUR NOODLES. (If you make any of this stuff, please invite me over. I just finished reading this cookbook and I am STARVING now.)

I have a big weakness for noodles and dumplings - so this book was right up my alley. I love the fusion recipes mixing Chinese, Japanese, Taiwanese food and more unconventional ingredients to make all kinds of noodle dishes from scratch. It's nice that there is options to take shortcuts too for when we are short on time. There are photos for every recipe and I want to try them all, the explanations for folding is very clear. Highly recommended.
