My second most used cookbook. This is a beautiful cookbook and all the recipes I've tried have been delicious and worthy of cooking many times. I've learned how to make Harissa and preserved lemons from within these pages, as well as how to properly steam couscous (a performance if you don't have a couscoussier but worth it for special meals).
The tangia is spicy and wonderful, and the beef in tomato jam is delish. Everything is delish in this, I feel like cooking some Moroccan food now. And the author doesn't make it seem intimidating (which, before buying this book, I always assumed it to be), each recipe is well explained, beautifully photographed and put in the context of a Moroccan meal. If you've never cooked Moroccan food before but this book, I can guarantee you'll be cooking it regularly as I now do.

LOVE this cookbook! I can't seem to get enough of the Moroccan spices and tangines.
