This wonderful new cookbook has a lot going for it, with a few drawbacks.

Pros: There's a big range of recipes for drinks, desserts, one-pot meals, street food, staples, etc. The author is from a Puerto Rican family and learned most of the dishes from his father (the stories accompanying the recipes about this are also sweet and sometimes funny). The author gives recipes for most staples but you can also buy them ready-made and canned, so you can choose if you want to make it 100% from scratch or use a good shortcut (another reviewer criticized the book for listing ingredients that are other recipes in the book, not realizing that these are ingredients you can just buy if you don't want to make them -- it's like if an American cookbook called for ketchup and also had a homemade ketchup recipe in the book, you don't have to make it from scratch to use the recipe). There are many recipes that are naturally gluten free, including a flat bread that is basically one ingredient (and salt). The recipes tend towards whole foods and less processed ingredients, with the exception of the author's fondness for Nutella. The author is likeable and the recipes sound delicious.

Cons: Folks who want a photo for every recipe will be sad. There are very few photos of the recipes, basically one per chapter (this is a standard formula with Rockridge Press). There is no nutritional information. There are a few editing issues (vague directions, a hard to read font that tells you whether the dish is gluten-free, etc.). I wish there were more vegetarian recipes. Many of the recipes are fairly high in carbs and not the healthy type. There are not a lot of vegetables used in any of the recipes with the exception of the occasional cabbage. They tend to involve meat, rice, fish, plantains, yuca, beans, cheese, corn and corn meal, and coconut.

This book has delicious, authentic Puerto Rican recipes that I'm really looking forward to cooking.

The title doesn't lie - this collection of Puerto Rican staples can all be made with relative ease from ingredients that can be obtained at the grocery store without much fuss. Not only that, but these recipes allow for a good deal of flexibility through accompanying variations, cooking tips, and suggested substitutions. Of course, the relative simplicity is by no means the only thing that The Easy Puerto Rican Cookbook has going for it. It also felt like the book provided a thorough and informative mini-education on Puerto Rican cuisine. That, and every single single recipe that I leafed through, whether it drink, dish, or homemade condiment, practically burst off the pages with bright flavors that I could practically taste from my Kindle.

If you are someone who thinks that you want to have a go at the world of Puerto Rican cuisine, then this is definitely a rock-solid starting point.

This book starts with an intro to the cuisine and includes a list of essential spices and pantry items. I always appreciate this in books so I can make sure I am well stocked.

Recipe sections include:

Beverages and No Cook
30 minutes or less
5 ingredients or less
One Pot
Sheet pan, casserole and Bakery
Slow cooker and pressure cooker
Staples

Recipes contain numerous tips including substitutions, make ahead, leftover, entertaining, variation and ingredient tips. These are great additions and extremely helpful.

I am excited to try a guava margarita, Puerto Rican style crab cakes, and of course arroz con pollo. So many of the recipes sound mouth watering.

My one disappointment is that there were so few pictures and most were prep pictures instead of the final product.

I have a few "traditional" Puerto Rican cookbooks, but this is a new favorite. While not comprehensive, it has the key dishes and even a recipe for pique that is broken down in an approachable way. Yay!

I have not made any of the recipes yet but I will be doing soon. This cookbook has 100 recipes that have a test of the island of Peurto Rico. Lots of rice and beans but hey I like rice and beans. There is a guide in the book that tells you if your pantry is stocked with Puerto Rico. There are also tips at the end of each recipe, I love this part, that lets you know what you can substitute, make-ahead tip, leftover tip, ingredient tip, variation tip, and entertaining/holiday tip.
We start off with Beverages and No-Cook recipes, 30 minutes or less, ingredients or less, One Pot recipes, Sheet Pan, Casserole and Bakery, Slow Cooker/Pressure Cooker Recipe, and lastly, staples.
As I looked through the recipes I found quite a few that I would like to try like Arroz con Polo which is Rice with Chicken and Arroz con Salchichis which is Rice with Sausage. Nice easy recipes with minimal prep involved. That is great. Sometimes I like being in the kitchen cooking and other times I don't.
I like the cookbook, wish there were more pictures. This is a cookbook that is perfect for the person who loves Puertan foods or you are feeling experimental.

Like the author, I am first generation not born on the island itself and understand what it's like to 'speak predominantly English at home', and eating a 'predominantly American diet', however the roots of Puerto Rico run deep, and after many trips to Puerto Rico, I realized that culture had such an impact on me, and learning to cook Puerto Rican food became a passion. I enjoyed this cookbook since it's a simple one that doesn't overwhelm as some cookbooks can. I laughed when I saw recipes for Limber de Cheesecake/Nutella since I've recently made Limber de Coco. I'd recommend it to a novice cook interested in making PR dishes - while I'm missing photos that could enhance this book, it does have numbered instructions, notes on dairy/gluten/nut/vegan recipes, and it includes my favorite street food - pastelillos de carne (meat turnovers). #TheEasyPuertoRicanCookbook #NetGalley

My mother cooked a lot of Latino dishes growing up, so scanning through this cookbook put me in a nostalgic mood. :) I really like how the recipes are categorized:

There is also an Index in the back for locating particular kinds of recipes. I haven't made any of these recipes yet, but they look easy and I can't wait to start.

Nice basic recipes, nothing seemed very complicated. There are references to several other recipes included in many of the recipes due to them being basic building blocks of seasoning (sazón, adobo- not like the sauce you find Chipotle peppers packed in, etc.). Many of these (especially the sazón and adobo) can be found in well stocked Hispanic store sections or online if you don't want to go through the trouble of making them from scratch. Only gave it 3 stars since I didn't get to try any of the recipes. And because my husband, who is Puerto Rican, rated it that way. The recipes weren't what he was used to. I think that's kinda like regional specialties anywhere having personal family variations that the families swear is the only way to make the dish! Would be willing to get it again if my library would carry it. As it was, I had to borrow from an out of state library.

As a Puerto Rican, I was a bit skeptical when I saw this cook book, but after thumbing through it, I can tell you it looks legit. After living 40 years in the island, I left for the U.S. after Hurricane María. I often crave Puerto Rican staples and I have Puerto Rican cookbooks, but this is the book that inspired me to actually make the dishes from my island. My only criticism is that it does not have enough photos (at least the ARC didn't). I know what these recipes look like, but the cookbooks I buy tend to have a color photo for each dish.

Unfortunately I cannot say that I have ever had Puerto Rican food as I live in the middle of the United States and in a region where main ethnic cuisines are either Tex-Mex, Italian if you can upgrade most pizza joints to that distinction and the usual Chinese. Not a great selection, especially for those who are cuisine adventurous.

Having a chance to actually read over these recipes has allowed me to be introduced to the concept of Puerto Rican food simplified by today's accessibility and technological advances. Tony has done an awesome job at least from my viewpoint of making easy-to-understand recipes that are also informative of the Puerto Rican culture.

At the same time the sharing of these recipes is also quite intimate for not only does the author share what makes the dish Puerto Rican or its place in the cuisine but he also shares family history. The reader gets to learn just which member of his family likes the dish prepared in its own way, what they prefer for sides for that dish, etc.

I also enjoyed the fact that the author chose to categorize the recipes instead of by similar categories such as breakfast, soups, etc., he chose to do it by categories ascending in complexity. As a result beverage recipes and no-bake or no-cook recipes are first with basics such as adobo as the end. This set-up allows the reader to be able to find the recipe that works for him or her.

Each section is introduced by a photograph of a selection of recipes from that section and on the opposite page a small paragraph introducing that category. From there each recipe is listed with a bold title, basic serving sizes, what nutritional guidelines it meets (vegan, vegetarian, gluten-free, etc.), prep time and cook time. Ingredients are listed on the outside edge, an introductory paragraph above the directions and any suggestions or variations offered by the author.

The only thing that makes this a bit off for me is that there are so many alcohol-based drinks, which isn't a bad thing for adults. But with the exception of a few juices or milks there just really isn't anything much for children when it comes to beverage.

For those who like to explore ethnic foods and to get a few exotic recipes in their recipe box I would most definitely suggest this book. There are a few recipes that I would love to give a try on but with my husband being against Hispanic foods I am not quite sure whether I would be able to do so or not, especially as he also doesn't like rice.

Hello Gemmies! I have an exciting book review to share with you today. Please note: I received a digital ARC of this book (via NetGalley) from its publisher in exchange for an honest and fair review.

The Easy Puerto Rican Cookbook is the new cookbook by Tony Rican. I am Puerto Rican and was thrilled to receive this ARC for review. I immediately jumped at the chance to try some of the recipes at home. This is a great overview of traditional Puerto Rican cuisine. With 100 recipes there are many options to choose from. I appreciate that the table of contents are divided into sections like staples, 5 ingredients or less, 30 mins or less, etc. instead of the standard breakfast, lunch, dinner breakdowns.

There are short chapters to give you insight into the authors life and passion for Puerto Rican food. I enjoyed learning that like me, Tony Rican is a first generation Puerto Rican stateside and his family is from the same town in PR as mine....Santurce. This book was a joyful reconnection of my culture through food.

As mentioned The Easy Puerto Rican Cookbook is chock full of delicious recipes. I tried three recipes from the book. The first, Guineos en Escabeche. I have never made this dish in a slow cooker before and it worked surprisingly well! I'll be using this cooking method going forward. Next I tried the Guayaba Smoothie, this was super easy to make and I had all of the ingredients in my pantry! Lastly, I made the Ensalada de Aguacate y Tomate. This is a refreshingly simple and delicious salad. I added fresh garlic to the dressing recipe because everything should have garlic LOL. I cannot wait to try the mofongo and mojito recipes!

I like the notes and tips provided at the end of each recipe to make the cooking experience even easier. I just wish photos of each recipe were provided, this would have been especially helpful for those unfamiliar with Puerto Rican food to let them know if they are on track when making the recipes.

If you are a fan of yummy recipes, learning about other cultures through food, and trying new things then go read this book! This gem published by Rockridge Press is available for pre-order from all major booksellers and is set to release on May 12, 2020. I give The Easy Puerto Rican Cookbook 4 out of 5 gems. I cannot wait to try even more recipes in the book! Happy Reading and Happy Eating!

The Easy Puerto Rican Cookbook by Tony Rican is a good cookbook to use when learning about how to prepare Puerto Rican cuisine. I selected Rican's book to review as I wanted to learn more about Puerto Rican cooking, as I have family that lives in Puerto Rico, and when I have visited my family they spoiled me by preparing some of the island's traditional cuisine. I was not disappointed by Rican's cookbook as he clearly explained how to buy and prepare ingredients. He also provided a good selection of recipes giving a quick overview of Puerto Rican cuisine.

Some of the recipes you'll find in his cookbook include (You will find both the Puerto Rican spelling and English recipe spellings for each recipe. I have chosen to use English spellings only in my review).

Puerto Rican Eggnog
Coconut Milk (I've tried this in Puerto Rico and can attest this is a thirst quenching beverage)
Avocado and Tomato Salad
Fried Plantains
Sweet Corn Fritters
Puerto Rican Oatmeal
Meat Turnovers
Pulled Pork Sliders
Puerto Rican Rice with Pigeon Peas (another tasty dish I tried while visiting Puerto Rico)
Beef Stew
Sweet Bread Rolls
Three Milks Cake

I also loved how the author thoughtfully tagged recipes with key information such as Nut-Free/Vegetarian or Dairy-Free, Gluten-Free/Nut-Free.

I enjoy Puerto Rican food and grew up with a friend whose mom was from there. I loved eating over her house. Then we grew up and it wasn’t until a few years ago an acquaintance would occasionally bring Puerto Rican food to a potluck. Oh how I forgot how much I liked and missed it!

The book goes over some of the spices used in many of the dishes, dry foods, canned & jarred good, and other essential ingredients. I was delighted to see an alternative to not using lard.

There is a good variety of recipes. Not knowing the names of the ones I enjoyed with my friend as a youth-several looked familiar along with an array of mouth watering foods I didn’t recognize! They all made me hungry!

The one thing that I really didn’t like about this cookbook was the font size. It seemed extremely small compared to other cookbooks from this publisher. I realize they are trying to fit the recipe all on one page but personally I would have preferred a larger font and having to turn the page. I would have given the cookbook a 5 star if it wasn't for the font size. Other than that this is a great cookbook with something that will expand you palette taste buds. If you haven’t tasted Puerto Rican food – you are missing out on some incredible tasty food.

Wow - this cookbook is phenomenal. I had barely made it through a fourth of the book and had already marked off so many recipes I wanted to try. The name says it all: it really is easy! The ingredients are easy to find at your local grocery store and the recipes are super simple. The book is broken up into a few major categories: no cooking required, 30 minutes or less, 5 ingredients or less, one pan dishes, crockpot/slow cooker recipes, and sheet pan/casserole dishes. The only draw back is that if you are wanting desserts, you would have to look through each of the categories to pull out desserts.

I personally love how many recipes incorporate guava! Guava margaritas, guava and cheese fried dumplings, guava smoothies and more! Everyone needs more guava in their life. There are so many recipes that I can't wait to try - mofongo (love mofongo!!), arroz con pollo, tostones, tres leches, cazuela, and so many more. The Easy Puerto Rican Cookbook is a goldmine!

I requested this cookbook because every now and then I like to eat Latin Food...there weren't actually a ton of recipes I could use but I am also a fairly picky eater. The pictures were great and I loved that the author included so many...I can't stand it when you get a cookbook and there are only a few pictures or they are in black and white. I want to see what it is I would be making and eating before I decide if it is worth the time and energy of giving it a shot. I also wanted to see exactly what Puerto Rican food would entail as opposed to Cuban, Mexican, Dominican...what have you. Some was similar and some was different. Either way, it was definitely worth my time and I would recommend it to anyone else out there that might be interested in this type of food.

Callisto publishing has been issuing many wonderful cookbooks that are filled with recipes that seem very doable.  In my opinion nothing could be better for the current moment.  Since we are all eating at home more, it is nice to add a bit of variety.  This time,  the 100 recipes are for foods from Puerto Rico.  As can be seen from the cover, the dishes look delicious.  Just a few of the things that can be made are Puerto Rican style crab cakes, meat stuffed sweet plantains, tres leches cake (my favorite) and garlic rice with shrimp. Two things that I especially liked in this book are the section for recipes that take 30 minutes or less and the section of recipes that use five ingredients or less.

We are huge fans of Puerto Rican food and have absolutely zero idea how to cook it.

This book is categorized very well. It's easy to find dishes and what you may want to make. The ingredients are simple, and the instructions are clear and easy to follow.

my only thought (ad it maybe because I am looking at an ARC) is I would like more pictures! Puerto Rican food is so beautiful & so many people are not familiar with it that I think loads of pictures will be invaluable.

This is a wonderful cookbook that I am so thrilled to find!

This book is well organized to find the type of dish you want to make. The ingredients are simple and the instructions are clear and easy to follow. Sadly there are almost no pictures in this book which is a big thing for me in a cookbook.

I really like to see the finished dish. However, this book made me feel at each trying any variety of recipes they are easy to make and taste fantastic.

I highly recommend this book if you enjoy Puerto Rican food!!

I don’t have a lot of experience with Puerto Rican cuisine so it was a great experience to open The Easy Puerto Rican Cookbook and see so many recipes that are accessible and look tasty. As it calls itself a melting pot cuisine, I could see that from the influence of Spanish, African, and Caribbean (other Caribbean islands than Puerto Rico.)

This is a good introduction to Puerto Rican cuisine. I would have liked a little more information on the cuisine as a whole as well as more photographs. There are really good basic recipes for some of the foods I associate with this type of cuisine (sofrito, etc.).

I would likely have given this a higher rating, but I would have to make a lot of substitutions for ingredients rare or expensive in my area.

Not very easy or simple. The ingredients in the recipes often reference another recipe, and when you turn to THAT recipe, it references yet another. You can't make one thing without having made at least one or two first. It's just too daunting for me to even bother trying any recipes. I don't even know what half the ingredients are.

Pros: Puerto Rican meals, truly simple instructions, quick-cook times, easy to find ingredients.
Cons: No images, no recipe I'm excited to try, sub-par meals. There is literally a recipe for white rice and canned corn beef. Did I grow up eating this, yes. But this is equivalent to a recipe including a box of Kraft Mac and Cheese.
Not a bad book but disappointing.

Great cookbook ! It was refreshing to see all the recipes I grew up with in one book plus more like drinks and appetizers. The recipes are very simple and with ingredients I can easily get here in the USA. My family is loving the taste of the island at home.
The book have lots of pictures. Clear instructions of the recipe as well.

I enjoyed this authentic cookbook! It contains a wide variety of recipes. The recipes are easy to follow and contain natural, fresh ingredients. Any level of home cook will be able to follow along with these recipes. My thanks to the publisher for the review copy in exchange for my honest review.

Yum recipes that are simple to create. It will not cost a lot of money and the foods are so good. You may need to modify for certain diets.
