4.5 delicious stars. This book makes me want to jump into the kitchen and get cooking. I love the simple photos, the descriptions of each ingredient and the sauce recipes. A great Japanese reference recipe book that I'm sure I'll return to often.

The problem with Japanese food, usually, is that it is a labor of love to make. In this book, Chef Tim Anderson has taken his devout love of the cuisine and simplified it for cooks who don't have all day to spend in the kitchen. But the special part is that he has figured out how to retain the flavor of Japanese food. This book is a godsend for Japanese food lovers, and also anyone who just enjoys really delicious food. Additionally, it is a stunningly gorgeous book with edged pages, an embossed cover, and beautiful layout (the chef's background as a visual artist shines through). So whether it is a gift for yourself, or another cook in your life, it feels like a bit of luxury in the kitchen. Order it-- you'll be glad you did.

Flipping through this book, I was impressed. The book has a good format- explaining key ingredients at the start. The range of Japanese dishes covered is impressive- I can't think of a Japanese item that was not described. Even recipes for salads, dressings and condiments were included. English words are used to describe the dish (like "egg and chicken in rice"), so there is no need to translate in your head (like "oyakudon"). The writing is humorous and encouraging. The instructions make the dishes seem so simple to make. The pictures are small, but mouth-watering. This book makes Japanese cooking seem very accessible. The only reason I haven't given the full 5 stars is because I haven't actually tried any of the recipes yet.

This book is phenomenal at making Japanese food accessible for the home cook. Ingredients are explained, there are substitutions listed, the recipes are straightforward, the seasoning is on-point, and the author's voice throughout is like that fun friend who just wants you to come over, eat some good food, and hang out. There are recipes that include or require other recipes (such is the way of Japanese cooking), but it wasn't overwhelming. So far the 25 or so rexipes I've made have come out smashing. I highly recommend this book!

A simple and approachable cookbook that absolutely delivers in terms of simplicity! You won't fear the "complicated" Japanese cooking. I'd welcome cooking times though because sometimes it felt as if everything was "super uber easy and quick" and many recipes just required us to cook the food "until brown" etc., also it felt a bit westernised but often, I believe, reflected what the Japanese do really eat.

This is the selected book for the Food52 Cooking Club July 2019 cook-through. I cooked a few of the recipes and these were simple to make with delicious outcomes. We lived in Japan for three years, so I know what authentic Japanese tastes like. I can now make the sauces from scratch, saving me money from buying. This book will be well used for years to come.

I adore this book. I have always been fascinated by Japanese food. Now I can cook it! You must buy this. It is the best Japanese cook book ever for non-Japanese Japanese food lovers... um, yeah. That's it.

Good recipes. Some are hit or miss.

The katsu curry sauce was a little bit disappointing to be honest.

Amazing book to learn how to cook Japanese food! I really love it! It is easy to follow and there are a lot of pictures of the food. But sometimes it isn't clear how long some things take to cook. I would like to see beforehand how much time the whole meal would take. Also, it is pretty expensive in the beginning if you start buying everything you need. With my first 4 dishes I paid almost 100 euro's. But a lot of the ingredients last long! It is also a pre that the book mentioned that you should buy most of the stuff in a toko. This way it is cheaper and easier to get your japanese ingredients. And one thing I also miss in the book is that the writer doesn't always mention what dishes are traditionally eaten as breakfast. The writer also doesn't mention what kind of rice 'japanese rice' is. On the internet I found several different types of japanese rice. Still, I would recommend this book to everyone! I'm having a lot of fun with it!

I purchased this book, naively thinking that it will teach me healthy japanese cuisine. Instead I got incredibly fatty recipes. Almost everything is fried or grilled in liters of oil. The chosen meat in recipes is dominantly pork fat... Seriously? Is this japanese cuisine or japanese rip off acording to some fat british or american man? (Idk what nationality the author has but the signs are there - milion of fat, sugar...) I refuse to believe that slim japanese people eat every day these caloric bombs and mantain their waistline. Huge dissapointment.

Delightful book on Japanese cuisine that works hard to bring what can seem like distant flavors into the American home kitchen. It does a great job of that. I found many recipes that i will be trying out. Lots of content for vegetarians. Author was a winner in Masterchef and i will look forward to watching that season. he has a lot to offer.

- cotoletta di maiale alla giapponese;
- carbonara giapponese.
P.s: ho scoperto che gli ikura (i.e. uova di pesce) sono acquistabili online.

Tim Anderson makes a cuisine I thought too hard to cook at home so accessible and easy, yet tasty as any Japanese food I’ve eaten out. I wa gifted this book after a holiday to Japan, and since receiving it have made so many of the recipes in it. The sauces in this book are always in our fridge now and many guests have enjoyed the fruits of our labour from this book. It is probably the cook book I have used the most and incorporated so many of the recipes into every day lunches and dinners. You really can’t go wrong with this one!

This is one of my favourite cookbooks. The recipes are varied, approachable and - above all - tasty. The Surprisingly Awesome One Hour Pork Miso Ramen was fab but other lower key recipes have been real hits too. The Multigrain Rice is now a regular in my household and the Cabbage with Sweet Ginger Vinegar makes getting a surprisingly big cabbage in an online shop a pleasure rather than a chore. The Japanese Potato Salad is a favourite too (great with crab sticks instead of ham). Only one of the 20+ recipes I tried disappointed me and even that may have been down to the type of miso I used.
