I'm giving this 3 stars as a cookbook, not as a cuisine book.
The recipes are all clear, concise, and easy to follow and that's really what a cookbook should be rated on.
Irish cuisine isn't much. I hate to say it. Being Irish and growing up with my Irish relatives in Connecticut, the only decent Irish food I can remember eating is my Aunt Mary's Irish Bread (I've got the original recipe in her own handwriting and for some reason my mother saw fit to write all over it before she sent it). Most Irish soda bread is equally good, but nothing brings it back to me like a piece made from Aunt Mary's recipe along with some Irish butter and a cup of "Irish tea" which was nothing more than Twinings Breakfast tea with milk and a lot of sugar.
So, anyway, a good, solid cookbook on a cuisine that's not too good.

Awhile back I purchased another Irish cookbook and was disappointed by the pretentious sounding recipes. Fortunately I found the An Irish Country Cookbook and it seems to be filled with the recipes I was looking for as the recipes are down to earth and homey. I'm not sure if this is true Irish cooking but it is what I imagined Irish cooking to be like. Throughout the book you will find hopefully amusing stories to round out the cookbook.

Back to the recipes...some of the recipes you'll find include:

Creamy Chicken Soup
Scotch Eggs
Smoked Salmon with Cream Cheese
Irish Potato Bread
Irish Wheaten Bread
Potato-Apple Fudge
Kinky's Eggs Benedict with Soda Faros
Beef and Dumplings
Cottage Pie with Champ Topping
Irish Country Chicken Breasts
Pan-Seared Duck Breasts with Port and Redcurrant Sauce
Irish Stew
Roast Fillet of Lamb
Pork in Mustard Sauce
Toad in the Hole
Fish Pie
Kedgeree
Apple Chutney
Cranberry Chutney
Champ
Bacon and Leek Pudding
Yorkshire pudding
Easy Bread Sauce
Frockton (Bilberry or Blueberry) Jelly
Mint Sauce
Apple and Bread-Crumb Pudding
Coffee Ice Cream
Queen of Puddings (Bread and Butter Pudding)
Ginger Biscuits
Very Easy Boiled Fruit Cake
Chocolate Truffles
Turkey with Stuffing and Gravy
Christmas Cake with Royal Icing and Marzipan
Irish coffee

I confess I have not read the Irish Country series by Patrick Taylor and as such I didn't understand the stories published within the cookbook. I did, however, enjoy the look at Ireland you got in the introduction to each of the types of dish - fishy starters, bread, mains and so on. I also liked Kinkey's notes in the recipes. I do that to my own cookbooks - add comments about what I liked or didn't like or what I would add or take away. Kinkey's comments offered tips, additions and more.

While the device of using Kinky as the narrator for the tales of Dr. O'Reilly and his eccentricities, this is a cookbook that really does not lend itself to the general public. The measurements needed for the ingredients will typically have one or two that need to be awkwardly converted by using a chart in the front of the book. In addition, the book contains about four pages of randomly selected colorful pictures in the middle of the book. I found two recipes (strawberry or raspberry ice cream and cheese straws) that looked to be inviting enough to try. The one feature that I did enjoy was the fact that Kinky had a tip for every recipe.

3.5 stars. The blend of recipes and short stories in the volume was a welcome surprise, as was the way the book is presented as being by Kinky Kincaid, one of the characters from the Irish Country book series by Taylor. I've made a couple of the recipes and they turned out well. A new more food illustrations or photos would have been nice in there, while the inclusion of some of the artwork not clearly related to the content seems a bit random.

I received a free copy of this book through Goodreads Giveaways. Thank you.

This is a great cookbook with a fantastic variety of recipes. The recipes are great! Very authentic and well researched. If you like traditional irish food, you'll like this book for sure! As a personal preference, I wish there were more pictures. I can't wait to make some of these recipes.

This was a nice collection of pretty basic recipes that a person would be able to make during the week. Lots of recipes with potatoes and Guinness in them so that's a bonus. Included are some cute typical Irish short stories.

What a wonderful cookbook! Not only does it have some great recipes that I want to try right away, but it's got stories that go along with the Irish Country series that Patrick Taylor writes. I thoroughly enjoyed reading it, and it's a wonderful addition to my huge cookbook collection.

This was a very big cookbook--lots of recipes--and some looking very delicious. Thank you, Kinky! But the wonderful part of this book is that each section contains a short story about the good Doctors and their village and their patients. A really enjoyable bonus.

I liked reading the recipes. Tried a few. Still make Cottage Pie with Champ. My family loves it. That said, I've read all his Irish Country books and the cookbook is a compilation of all the recipes that were shared in the books, so I had seen them all before just not all together.

This is one of my favorite cookbooks to date. The recipes are fairly easy to follow and absolutely delicious! I have yet to receive even an apathetic review of anything I’ve made from this book. It’s completely and totally worth it.

I read all of the books in Taylor's Irish Country series, and frequently copied the recipes, though I can't remember whether I actually made any of them. I was delighted to see this book, both for the opportunity to revisit the residents of Ballybucklebo and to actually own a set of recipes from the fabulous Kinky Kincaid! As I actually bought this book and didn't just borrow it from my local library, I dog-eared every recipe I hope to try!

When I borrowed An Irish Country Cookbook, I didn't know that it was based on a series of other Irish Country books. However, judging from the stories in here, I'd probably read those too.
There are different Irish-themed cuisines in this cookbook, ranging from barmbrack to Irish stew. Plus, there are some leisurely stories oriented around some fictional characters I didn't know, which were enjoyable to read. I'd recommend this book to anyone interested in Irish culture.

The recipes in the majority of this book are not traditionally Irish, so if you came for that reason, you are going to be disappointed. I tried the roast potatoes which do not disappoint at all; so good you would want to make them for every meal, if they weren't so time consuming that is. I also tried to make the brownie in the mug, which was a complete failure. I honestly don't know why it was included in this cookbook in the first place because that is quite a common online recipe that you will find literally any where. Then I tried my hand at the butternut squash soup recipe. It took a LOT of time just preparing the squash to be roasted first, then to peel the skins off after roasting them. It tastes fine, but I couldn't get past the texture (like pureed baby food which is off putting to say the least). The more traditional Irish recipes were standard and fine, but they didn't blow my socks off or anything. In my opinion, just rent it from your local library like I did, try the recipes that interest you and then return it.
