È un libro avvincente per chi é del settore perché non si focalizza sui numeri o su protocolli da applicare, ma sulla filosofia dell'ospitalità.
Quando nasciamo siamo alla ricerca di calore umano, dello sguardo di chi ci ama e di cibo.
L'autore applica questo principio basilare ai suoi ristoranti e come lo racconta é meraviglioso.
