Really informative without being particularly long-winded. I was waiting to write a review until I'd, you know, made some bread; today's ciabatta did not disappoint! It has extraordinarily clear instructions that tell you both how and why, which I always appreciate in something as precise and easy to screw up as bread baking. I'd definitely recommend this, and my review may go to five stars as I try more recipes.
good, in-depth info without being as long or sounding as complicated as the bread bible or the baker's apprentice. the many variations on basic recipes gives plenty of options as well as inspiration for making my own changes. the DVD was great for seeing techniques in action that are hard to capture with still photography. now i just need to get baking....
I came across this bread baking book at Horizon Books, our favorite independent bookstore in Traverse City, Michigan. I've picked up several great bread cookbooks there. The bonus with this book is a DVD with excellent tips on shaping dough. I recommend this one!
