No kitchen should be without this book. I have never had a bad meal from this. They walk you through almost every possible mistake and substituition you might think up. Yet the recepies leave room for personal flair whn you need it.
The pictures are great, the diagrams actually are useful, and the product/tool reviews do come in handy. Some things are more regional than others, but you get the basic idea.
This was an awesome book. I have grown extremely fond of ATK books for the amount of helpful information they include aside from tried and true recipes. I especially enjoy the info on equipment, specific product/brand recommendations, and the overall explantions as to why certain techniques, ingredients and equipment are used.
I love anything from America's Test Kitchen, Cook's Country, Cook's Illustrated, etc. The food science is great, product & brand comparisons are great & knowing they have tweaked these recipes every which way to Sunday gives the confidence to know it's going to turn out great if you follow it to the letter.
A realistic cookbook for the casual home cook. No need to wonder if the recipes are perfect, because ATK tests and re-tests to get them right. I tried several recipes from this book and all were a rousing success, even better than my old standby versions.
Full of information about the best equipment to buy, best tasting ingredients, & optimal serving instructions. Also some recipes that look seriously good.
great book. i loved reading the reasoning and testing and failures that lead to why their recipes do things a certain way. i also loved the equipment testing and the product testing.
(didn't care for all the grilled recipes because i don't know how to cook on a grill.)
