This is a cookbook with some tasty recipes. I found some of the recipes to have a long list of ingredients. Throughout the book is helpful advice and history tidbits about the recipes. The Introduction goes over the terminology, the equipment and the cooking settings. There is a Table of Contents, an Index and a Resource page with website addresses. The page layout is beautifully executed. The photograph is attractive.
While the food may be fresh, the recipes, not so much. A rehash of similar, and while I applaud the efforts, this is an average on scale for Vegan Instant Pot books I have seen (several).
I still think it's weird to say I've "read" a cookbook, but it's more true than not. I'm trying to shift to a more plant-based approach to eating, and I love my Instant Pot so this seemed like a good fit for me. The challenge for my personal needs is the amount of fat/oil in almost all of the recipes. I need low fat and these are definitely not low fat although many can have the fat/oil significantly reduced.
I could see those who love a variety of ethnic foods and are wanting a more plant-based diet really enjoying this book though. There were definitely some recipes that I'm excited to try. Just not as many as I was hoping. It did have some helpful general cooking tips at both the beginning (about the Instant Pot) and the end (about general cooking tips for common items) that were new to me, so I'm grateful for those.
If you like using an Instantpot this will be easy to follow. It is also a good starter book if you have never used an Instantpot before. This book has saved me time and energy and also helped me to create some tasty dishes.
