From the author of the bestselling 15 Minute Vegan comes 15 Minute Vegan: Comfort Food. The book shatters the notion that vegan food is cold and soulless by showing you how to create inspired comfort foods, whether you're vegan or not. Vegan cookery expert Katy Beskow celebrates cooking for pleasure, soul and enjoyment, without having to spend hours in the kitchen. Using ingredients readily available in supermarkets, Katy's easy recipes and instructions will have you making delicious, nutritious meals time after time. The book explores how a mindful cooking process is as comforting as the final dish, even when you have just 15 minutes to spare, and offers 100 recipes across five chapters: comfort classics (chocolate chilli, moussaka bowls); sides & bites (sweetcorn fritters, speedy samosas); social sharing (mushroom bourguignon, garden biryani); solo recipes (spicy falafel burger, cashew chow mein); and sweet comforts (cherry pot pies, jam sponge pudding).
Author, food writer, cookery tutor, and recipe developer. I have a passion for seasonal ingredients, vibrant food, and fuss-free home cooking.
Once inspired by a bustling and colourful fruit market in South London, I now live in rural Yorkshire and cook from my small (yet perfectly functioning) kitchen.
When I started the vegan recipe blog Little Miss Meat-Free back in 2013, I never dreamed that within a year I’d be teaching cooking classes, demonstrating at food festivals, working with a handful of well-known brands, and writing for a national magazine.
I have since released three best-selling vegan cookbooks that help pave the way for the everyday home cook to enjoy satisfying vegan food without the fuss or the expense.
My fourth book, Five Ingredient Vegan, is out now, and my next will follow in July 2020.
I do admit it, this is Katy's first book that I happen to read and cook from. I have no idea how I haven't come across her more famous one "15 minute vegan" before (but I'll make it my business to own that one too!).
As the vegan cookbooks go this is one of the best ones I've read - not preachy, as some of them can be, not the one to make you feel guilty of not owning a cupboard full of different vegan ingredients and concoctions, not one that will have you feel tired already after reading a long list of ingredients (and even longer one with instructions), even before you start cooking.
I like it, and I like it a lot! Yes indeed, the recipes are quick, simple, modern and ones that you'll be happy to prepare, they won't feel like a "chore" - which is exactly how many of us feel in the kitchen, especially after a whole day at work. You also won't need a separate trip to the shops, as you'll probably have most of the ingredients at hand. It's an unusual vegan cookbook, in a way that it's not heavy with tofu or seitan, or much of any other vegan substitutes. The recipes have an array of fresh ingredients, as well as those everyday staples most of us (especially if you follow plant based diet on a daily basis already) will find in the cupboard - beans, pulses, grains etc. The book itself is divided into sections, that give you an idea of recipes included: Comfort classics ("veganised" version of dish you might be already familiar with), Social (ideas of menus for small parties, gatherings), Solo, Sides & Bites and of course the last course - Sweet :)
It's a prefect little book not only for vegans, but also for those of us who want a "meat free" meal, or don't want anything "heavy feeling", but still are after a warm and comforting meal. The book is beautifully published, with clean, crisp design and some eye catching photography. The recipe layout is simple and instructions very clear.
This one is a very pretty and enticing book. Though I am super picky with foods and won't eat anything out of this, my daughter loves it. All the recipes look easy to make.
Great for everyday meals or cook a few dishes for your next get together with family and friends. All dishes quick to make and look great. I've tried a few and all turned out delicious
