My top three thoughts on 'One Pound Meals':
1. I came across @miguelbarclay 's YouTube channel when I was looking for quick and simple recipes. I tried out every single vegetarian dish he has on YouTube and then found out he's active on Instagram; so I moved onto that platform to follow more easy to make and tasty recipes. I haven't not liked anything I've tried so far. I've sometimes adjusted some of the recipes according to increased servings and my preferences (guilty for adding too much garlic and way too much spice). I'm clearly over the one pound mark when I'm cooking but my intention here is to run away from the kitchen asap. Naturally, I wanted to get my hands on his actual recipe books and thankfully, my local library stocked up on them. This was the first book of his I checked out after waiting for weeks.
2. I love Miguel Barclay's entire concept of cooking cheap and tasty food with a set budget for a single serving. I end up cooking food in excess that needs to stretch for at least 4 meals. I am NOT returning to the kitchen to cook every single meal and snack! I then get bored and eating it becomes an ordeal. I suck at meal prepping so I wing it throughout the week. Miguel's dishes have saved me from turning to junk food on many of my lazy days. Just glance at the pictures in his book or check his dishes online to motivate you and to kickstart that appetite.
3. Now to finally talk about this cook book. It has a decent amount of vegetarian dishes and a whole lot of meat dishes. He also uses hashtags on top of the recipe pages to clarify the type and occasion the dish can be used for. Miguel doesn't look at fancy ingredients and everything is easily available in the local stores. As mentioned earlier, I follow his Insta account and I see how simple a guy he is. That carries forward in his cooking style as none of the dishes are lengthy, time consuming or complicated. I skimmed through the meat recipes as well and saw how fast those are to make. My go to dishes are the Stuffed peppers (I LOVE THIS), pancake stack, Moroccan spiced veggies and the spiced butternut squash soup (just made this one again last night).

Lots of great ideas and starting places for meals in this book and the recipes are easily scaled up for more than one if that's what you need.
My only issue is that some of the meals are more large snacks or portions of meat with a carb and not what I would call balanced. As I say a good starting point for well rounded meals and some great recipes.

A fantastic selection of recipes in an easy to follow way. Cost effective but still healthy and filling, with a bit of something for everyone. It does require some work on the odd recipe but honestly, once you get started you can fly through this book trying all sorts of recipes.
Now, what to make for lunch tomorrow? 🤔

Lovely easy recipies

Packed with ideas for meals that are simple healthy and cheap. Can't wait to start trying them out. Great variety too.

Easy to follow recipes portioned for one person. There's quite a few in here that I like - particularly the toad in the hole.

8.5 out of 10 fantastic options and easy to plan out a week of meals. Basic every day ingredients you can pick this up and make a few meals without heading shopping first.

Sigh. The 'one pound per meal' gimmick loses a bit of its shine when you realise they're all one-serving meals. I'll be spending the three pounds and tripling it, I guess.

This is a fab book.

I really like the way it is set up for one portions, making it so easy to scale up to fit however many guests you may have.

It's really interesting "make use of what you have" take on cooking is a refreshing change, and is easy to adapt/find something that you have all the ingredients for.

Accessible, easy to read and innovative. Really love this book, and will definitely be using frequently!

I saw this advertised in a magazine and thought ohh that might be interesting. And indeed it is a lovely book with lovely images and some lovely recipes but they are all intended for 1 person and can therefore be made for £1. As a mum to a flexible family - sometimes 3, sometimes 5 - on a limited income, this book is no good for me. Hence the two stars. Perhaps I should've known who he was because apparently he is famous on Instagram but alas the realm of social media is too vast for me to know everyone.

I think this would be a good starting book for someone moving out on their own. It's got appealing and approachable food.

As someone who's into cooking larger joints and portions at a time, it doesn't really fit my needs.

Agree with the comment that deboning a chicken thigh isn't the easiest of tasks. Also, some of the recipes seem like they are not enough food, even for one person - tempura prawns and vegetables, I'm looking at you. I mean, seriously, 8 prawns, 4 baby carrots, 4 slices of courgette, 4 small broccoli florets, and 2 spring onions.....who would be satisfied with those quantities? Not me for sure. Sounds more like a starter.

A splendid selection of recipes. The kind of cookbook one could easily work through, cooking all the recipes from cover to cover.

My only criticism is the recipes make great use of de-boned chicken thighs and readers could really benefit from a guide within the book on how to perform this particular technique (rather than bump up the cost of a recipe through the purchase of pre-boned chicken if one were unfamiliar with the process involved).

Can you really make decent food for a quid? Not really.

While you can actually buy the ingredients for a pound, Barclay cuts too many corners to fit the Instagram hype.

First, portions. They’re far too small as mains but a quid per person means something’s gotta give and that’s any feeling of being satiated.

Then there’s the breadth. Many of the recipes are monotonous (e.g. chicken will be bought bulk) and spread over several meals.

Many classic dishes are murdered in the name on thrift and ignorance to fit the claim, leaving them pale approximations of the real thing.

Also, a healthy diet needs variety but also needs to be low in fat but to make the recipes appeal in terms of looks and flavour, there’s a lot of frying and endless spuds-with-everything.

If you used this as your main cookbook, you’re going to get seriously fat.

So yes; cooking on a quid is hard but I suppose the other book, small, repetitive, imitation cooking somewhere in the pound to two pound bracket just doesn’t have the same ring to it.

Or make it marketable to the Instagram generation.
